t’s always exciting discovering new restaurants, isn’t it? Once you’ve decided to try a place you’ve never been to before, regardless of whether it ends up being a positive or a negative experience, it’s always one of those small kinds of adventures that keeps life interesting. Of course, it is that much better when the new place is fantastic - replete with great atmosphere, friendly servers, and delectable northwest inspired dishes. These are the kinds of places that do become new favorites. That new place you’re going to want to try very soon is the Parkway Grille inside the Wilsonville Hilton Garden Inn Hotel! Parkway Grille opened less than a year ago, right in the thick of the pandemic. It was a tough time for 8 • WILSONVILLE LIVING MAGAZINE • JULY 2021

restaurants to survive, let alone open to the public for the first time, but Parkway Grille made it through due to the fact that it is a truly exceptional restaurant and bar. It’s the perfect balance of fine and casual dining, so you can enjoy a chance to get all dressed up and go out for a special occasion (they even have a banquet room that is perfect for weddings, family reunions, business meetings, etc.), or dress casually and enjoy a fantastic meal in a relaxed atmosphere with friends or family. Whatever the occasion, Parkway Grille is aesthetically designed to accommodate a wide range of events. Of course, when it comes to a new restaurant, the main question is always “what about the food?” This is perhaps the most exciting aspect of the experience at Parkway Grille, as they are immensely proud to introduce Executive Chef Dolan Lane. He is a chef of renowned excellence, having spent the last 20+ years honing his craft, and working his way up in the industry.

Dolan grew up in Seattle and at the age of 17 began one of his first jobs working at a mom-and-pop Italian joint. At the time he didn’t intend to make a career in a restaurant, but he enjoyed the energetic, fast-paced nature of the business, as well as the specific sort of employee-customer interactions you only get in this kind of setting. He actually went to college to study photography, but kept working in the food industry on the side and eventually realized that was where his passion really lay. Leaving photography behind, he moved to San Francisco to attend one of the most respected culinary schools in the country. Upon graduation, he moved back to Seattle, began his career as a chef, and it’s been a steady climb ever since! In 2000 he and his Portland-native wife moved to the area, and the timing was fortunate enough to catch the “great food movement” that was taking place here while it was still in its initial phase. Portland is an exciting place for chefs, with restaurants serving cuisine which spans the entire gamut. He started as a Sous-chef at Blue Hour, working with well known restaurateur, Bruce Carey. From there, he moved up to Executive Chef at Clarklewis in 2008 (another restaurant owned by Carey), where he really got his feet wet in the whole farm-to-table experience. He spent some time at other restaurants here and there, but his next biggest stint

was with the very popular Meriwether’s, another big farm-to-table enterprise. Then, fortunately for us, in October of 2020 he became Executive Chef of the brand new Parkway Grille in Wilsonville. His background in Italian, Mediterranean, and French cuisine provides flavor profiles unlike anything

you’ve ever eaten before, and Dolan is dedicated to providing the best dining experience in the area for both guests of the hotel and local residents alike. Due to restrictions during the first year of business, they had to focus primarily on take-out and easily-transportable items; burgers and fish and chips have been popular in that regard. However, Dolan is very excited about the next few months, with restrictions easing and inhouse dining opening back up. He can’t wait to get back to cooking fun, seasonal, and fresh dishes that are best served in person, and he’s sure they’ll bring smiles to every face.

Parkway Grille offers wonderful options for any meal of the day. Their breakfast menu includes hearty choices like Steak & Eggs, Buttermilk Pancakes, a variety of Omelets and Benedicts, and more. The lunch and dinner menu is replete with mouthwatering delights such as Seared Sea Scallops with Wild Boar Risotto, Grilled New York Steak, and what they call “Roasted Airline Chicken Breast,” which comes with seasonal vegetables, creamy polenta, and a flavorful mushroom & sherry sauce. If you still have room for dessert, be sure to finish off with their delectable Apple Strudel, Butterscotch Budino, or Wild Berry Sorbet! Their biggest challenge right now is with staffing, so when you go in please be aware and pack your patience while they work through it (as all restaurants are having to do right now). There’s even exciting news to share: in July they will be reinstating Happy Hour and extending their dinner hours! Don’t wait until it gets too busy, though. Come in now and enjoy a first-class meal! et’s face it Oregonians, the local weather is not kind to our houses. We're celebrating a poem style created by Edmund Clerihew Bentley, the English novelist and humorist born on July 10, 1875. He created the first-ever Clerihew at the age of 16. "Sir Humphry Davy Abominated gravy. He lived in the odium Of having discovered sodium." As with most poetry, the Clerihew is defined by a set of rules. It must: • Include four lines. • Contain rhyming couplets of AA/BB. • Include a person’s name in the first line. • Say something about that person. • Be humorous. It is meant to be a funny poem, of course. Like limericks, poets poke fun at people real and imagined. As with any humor, the Clerihew draws a chuckle from the reader as well as the subject of the poem. If you can’t laugh at yourself and you’re the subject of a Clerihew, it’s probably better not to read it. If you’re writing a Clerihew about someone who can’t take a joke, maybe don’t write the Clerihew. Or, write it about not being able to take a joke. Apollo Drain & Rooter — A Story of Family Story & Photos Provided By Apollo Drain & Rooter Service

ith nothing more than an old used van, a dream and a desire to do great work, a young and eager Scott Bird and his bride Jody, began a journey.

If someone were to ask Scott if he was raised on a farm, he could emphatically reply, “Yes!” He grew up in Mattawa, Washington where he worked with his dad, three brothers and three sisters. When he was 21, he went to his cousin’s wedding reception. There, catching his eye from the reception line was his future wife, Jody. Their world grew closer since it was Jody’s sister marrying one of Scott’s cousins. Scott attended Utah Technical College for two years and graduated with a degree in Heating & Air Conditioning. The trade which he would then work in back home in Mattawa. Being back home gave Scott the opportunity to reconnect with Jody and they married in June of 1983. After about a year of working in the Heating and Air Industry, Scott and Jody decided to return to his family farm. Scott worked with his dad on the farm during the day and drove a semi-truck at

night hauling hay cubes to Seattle. Jody went to work for an insurance company in Othello, Washington. Jody’s sister and a couple of Scott’s cousins had started a drain cleaning company in Tri-Cities, Spokane and Salem, Oregon. It was going so well that they talked Scott and Jody into leaving the farm and to start their own drain cleaning business in Portland, Oregon. The Apollo journey: Scott was told by the bank that they didn’t think he was a “good investment.” They were so wrong. After procuring a bank loan, they were able to start a business of their own. Apollo Drain & Rooter was on it’s way! Their tagline, “Big enough to do the job, but small enough to care” would carry them through many years of hard and difficult work. Using their own apartment as their headquarters and Jody navigating with the large and cumbersome Thomas Guide Map Book, they offered a flat rate of only $26.50, no matter how long it took or how challenging the job was. Over the years of juggling work, marriage and parenthood the Birds eventually grew to become a family of 5 with 3 energetic boys! In 1985 Scott and Jody were blessed with their first baby boy, Brandon. Brandon was continuously by Jody’s side as she answered phones, scheduled jobs and handled the paperwork. In 1988 he was followed by little brother Ryan, and in 1990 their son Derek completed their family and the nest was full. With discipline, hard work and a good sense of humor, the young family survived many ups and downs. Tough economic times challenged their survival in the industry, but they kept going. No matter what challenges they faced, they did so with strength and integrity, always willing to help out their fellow members of the community.

As the Bird boys grew into men, they fully immersed themselves into the family business, which has become one of the fastest growing, full-service plumbing companies in Oregon and Washington. ell, friends, as we’ve been reiterating for a little over a year now, the real estate market is still hot, hot, hot! In particular, for you sellers out there, the continued dearth of inventory in our area means houses are still selling much faster, and for top dollar. it has become! Having lived in this development from the very beginning, the Beltrans have first-hand knowledge of the various floor plans and how the homes were constructed - Jaimy said he’s learned more about construction in the last 10 years than he ever thought possible without going into contracting himself. They also know the builders, and they are as familiar as you can be with the whole neighborhood. It’s practically their backyard! Jaimy is also keen to bring awareness to a new development everyone is enthusiastic about at the nearby Frog Pond community. As part of the Frog Pond Masterplan, this new neighborhood (which is still under construction) offers slightly more upscale luxury homes in the $500,000-1,000,000 range. The grand scheme for this area is to include extensive walkways, shared gardens, recreational facilities, parks, shops, restaurants,and more! It’s all designed to promote active lifestyles and connectivity within the surrounding communities. Once completed, it will be a beautiful, highlyregarded, and coveted neighborhood, adding even more diversity and interest to the landscape of Wilsonville. Jaimy stated that one of the greatest advantages Wilsonville has to offer is its basic “livability”. As redundant as that may sound on the surface, it’s actually quite a profound statement. Wilsonville is a fantastic place to live, and for reasons that are not necessarily self-evident! First and foremost (and this is quite obvious) is location, location, location! Conveniently nestled off of I-5 between Portland and Salem, it’s a perfect midway point for professionals requiring easy access to one or both of our state’s largest urban areas.

Third, Wilsonville has an extremely healthy selection of employment opportunities. In fact, the city has more jobs available than residents living here! These are not just minimum wage retail jobs, either. Huge corporate hi-tech and engineering companies are now calling Wilsonville home, offering incredible job options for qualified professionals. Fourth, the school system is considered to be one of the best in the state. For parents of young children, or those planning to have a family in the near future, this is a highly-respected district where you can be sure your kids are getting a superior education. Fifth, the downtown area has a thriving retail sector, and an increasingly popular Farmer’s Market. There are numerous other reasons, of course, but these reasons are a huge part of what makes Wilsonville such an incredible place to live. Connectivity, diversity, and sustainability (efficiency of design and protection of natural resources in the area): these things are key to Wilsonville’s continued success and they are major points of consideration in their plans for expansion. Wilsonville ranks 3rd in the entire state of Oregon in fiveyear population growth and it’s no wonder why!
