A LITTLE TASTE OF MEXICO RIGHT HERE IN TIGARD!

ho loves authentic Mexican food, made with nothing but the best ingredients (fresh whenever possible - no canned foods!), using homegrown recipes passed down from one generation to the next and served in a clean, lively, fun atmosphere? Or perhaps the better question is “who doesn’t love all of that?” I have great news for you, my friends because we have all of that right here in Tigard, just off of Hwy 99W, in the form of a cute little restaurant and cantina called El Guajillo. Phonetically, it’s pronounced El Gua-hee-yo, and it’s worth learning to say the name correctly since you’ll want to come back over and over again. Sarai Morales and Eladio Rojas are the husband and wife team that own and operate the restaurant, and it’s the very definition of a family business, as all of the employees are family as well! Sarai and Eladio initially started their culinary journey with a catering business. Friends and family all loved their cooking so much, and they so enjoyed the smiles they were putting on peoples’ faces, that they decided to take it to that next level. The catering business took off quickly so they started looking at brick and mortar properties, and when the perfect building became available 8 years ago, they dove in head first. They’ve been in the same place ever since, and during that time they have honed every aspect

of the business to make it what it is today - the best authentic Mexican restaurant in the area! So, what sets El Guajillo apart? It all comes down to superior ingredients and time-tested recipes. Many of their ingredients come directly from Mexico - from all different parts of Mexico, actually, because in order to provide the most flavorful and satisfying dishes, Sarai and Eladio scoured the country to find the best products from a variety of distributors. Their food and their service are so important to them that every plate that leaves the kitchen is prepared with the utmost care to ensure that it’s always fresh and always delicious. While all of their dishes are fantastic, they have two standouts that are top sellers. One is the seafood Molcajete bowl, which is a very traditional Mexican dish comprised of crab legs, mussels, clams, fish, shrimp, octopus, mushrooms, onions, queso fresco, cactus, jalapenos, avocado, radishes, and delicious sauce all served in a Molcajete (a volcanic stone bowl that is essentially the Mexican version of a mortar and pestle) with homemade tortillas on the side. The other local favorite is their Fajitas - delicious grilled meat served over onions and peppers on a sizzling hot iron skillet, accompanied by tortillas. Fajitas are fairly common here in the states, but the ones at El Guajillo are hands down
the best in town! The meat is marinated in their own homemade mix of spices and sauces that you can’t get anywhere else. It’s incredible! Don’t take my word for it, though, come in and try them for yourself.
right, the margaritas here are one-of-a-kind, unbelievably tasty, and made fresh on-site. Short of taking a flight to Mexico, it doesn’t get any better. If you have room for dessert, be sure to try their incredible flan - it gets rave reviews!
It could be argued that a great mole sauce is perhaps the truest mark of a really great Mexican restaurant. Mole sauce itself has a very interesting and contested history (not to mention many variations of ingredients and flavor), however it’s generally accepted that the best-known and arguably best-tasting mole comes from one of two states in Mexico: either Puebla or Oaxaca. And since Sarai and Eladio will settle for nothing less than the best, their mole comes straight from Puebla.

Chewing sugar-free gum after a meal or Halloween treat stimulates saliva production, which can help prevent cavities when combined with twice-annual dental visits and daily brushing and flossing. UNSWEETENED APPLESAUCE • Though unsweetened applesauce still contains natural sugars, applesauce offers your child the healthful addition of dietary fiber. Alongside promoting healthy digestion, dietary fiber helps maintain healthy blood sugar and cholesterol levels. Experts recommend that children aged one to three get about 19 grams of fiber daily, while children aged four to eight should consume 25 grams daily. A one-cup serving of unsweetened applesauce provides approximately 3 grams of dietary fiber. CHOCOLATE • Of all the conventional sweets that may make it into your child’s Halloween bounty, chocolate is usually a better option. Though chocolate does contain sugar, it is also believed to be more easily cleared out of the mouth than other sweets. Chocolate has a melting point between 93 and 96.8 degrees. In a human mouth of 98.6 degrees, chocolate melts and can wash off the teeth more quickly than hard or sticky candies. The best choice is chocolate that doesn’t include sticky additions, like caramel or nougat. A
re you ready for 23 Cuppsa Coffee? Don’t worry, you won’t go crazy from caffeine consumption, because that is actually the title of the new album by local multi-talented artist Patrick Burke. Not only is Patrick an incredibly friendly, warm, and intelligent guy, but his creativity seemingly knows no bounds. He truly embodies the meaning of the word “Artist,” having mastered an impressive array of artforms and mediums. He’s one of those people whose accomplishments make you stand in awe and wonder how he has time for it all.
It all began when Patrick was a young man and co-founded a band called The Parasites Of The Western World in 1978. They were one of the very first bands in the Portland area to ever self-produce an album. Due to the strength of their material, Music Millennium took interest in the band and wrote up an article in an affiliated magazine called Eurock which put them on the map. They went on to record and distribute 1500 copies of the album - quite an accomplishment for a band without a record deal, especially given their musical genre: avant-garde electronica. After that, Patrick went on to make a career out of playing in a multitude of other more commercially viable bands and did pretty well for himself. Then at the age of 40, Patrick decided to fearlessly pursue another of his passions, photography, ultimately graduating from the Brooks Institute of Photography with a Bachelor’s degree. Even after what most people would consider a full life of touring and playing professionally in bands, Patrick says that getting his degree in photography at a later stage in life was one of the best experiences he’s ever had. Turning himself into a true Renaissance Man, at age 43 he started what was essentially a second career in full-service commercial photography. Professional portraits, graphic design, photo restorations; he did it all and his photography business kept him very busy for the next decade. Not one to rest on his laurels though, Patrick discovered he had a deeper passion for fine arts photography. His shift in focus led him to setting up a booth at the Saturday Market and selling his prints. In terms of photography, that was his “Holy Grail” for artistic expression. Now Patrick is shifting his focus and returning again to his first love: music. He’s been incredibly prolific cranking out new tunes lately, and 23 Cuppsa Coffee is just one of his latest offerings. Like his many other musical statements, this one is cerebral, eclectic, and highly accomplished. He went into the project with the intent of stylistically channeling The Beatles, and has successfully produced an album full of catchy, fun songs in that vein. Patrick’s amazing talent is a local treasure that should be supported by all!
