Keto Zuppa Toscana Soup This is a copycat version of the Olive Garden soup that is perfect for a chilly night. Made with sausage, bacon, cauliflower and kale or spinach. It’s a hearty soup that is perfect for dinner! INGREDIENTS
1 Pound Ground Italian sausage 1/2 t Crushed Red Pepper (to taste) 6 Slices Bacon, Cut Into Pieces 1/2 Medium Onion, Diced
1 T Minced Garlic 8 C Chicken Broth 4 C Cauliflower Florets 1 C Heavy Cream 5 C Kale or Spinach
DIRECTIONS
1. Cook the Italian sausage and red pepper flakes in a Dutch oven (or large pot with a lid) over medium-high heat until crumbly, browned, and no longer pink, 10 to 15 minutes. Drain, remove from pan, and set aside. The purpose of removing the sausage is so that you aren’t boiling it in broth. 2. Add the bacon and cook until crispy. Remove from pan. 3. Add the onions and garlic the the same Dutch oven; cook until onions are soft and translucent, about 5 minutes. 4. Pour the chicken broth into the Dutch oven with the onion mixture; bring to a boil over high heat. Add the cauliflower, and boil until fork tender, about 15 minutes. Reduce the heat to medium and stir in the heavy cream and the cooked sausage; heat through. T
ake ‘N’ Bake pizza is really the best of both worlds, isn’t it? All of the benefits—fresh dough made from scratch every day, freshly cut vegetables, 100% mozzarella cheese shredded from blocks (not poured from a bag)—consumed at will, piping hot in the comfort of your own home, and none of the detriments. Eating at a pizza parlor can be noisy and uncomfortable. Getting it delivered, the crust is often rubbery and lukewarm at best. Buying it frozen isn’t even in the same ballpark. Take ‘N’ Bake is the only way to go when it comes to great pizza, and Papa Murphy’s is the preeminent purveyor. It all began back in 1994 with the merger of two highly successful Take ‘N’ Bake chains: Papa Aldo’s, founded right here in Hillsboro, Oregon in 1981, and Murphy’s, founded in Petaluma, California in 1984. Together they formed Papa Murphy’s and have since gone on to win numerous accolades and become the largest Take ‘N’ Bake pizza brand in the country. Their core mission is simple: Take the hard work out of mealtime so you can focus on more important things like family and friends. It’s easy to understand why this has proven to be such a winning formula. The Sherwood location has been here since 1999 and was initially owned by corporate. That all changed, however, when it was purchased by local couple Jerry and Patricia Kenney in 2008. Jerry had been with Papa Murphy’s for

almost 20 years at the corporate level when he was looking to slow down and move towards semi-retirement. He stepped down as Senior Vice President of Operations to become a franchisee, purchasing 4 locations in that first year alone (and 2 more since). It makes you wonder what he would have done if he wasn’t “slowing down”! At that same time their daughter, Allison, decided to change careers and join the family business. It was a matter of the stars aligning, and when she discovered they were building a family legacy, she wanted to be a part of it. She now co-owns all 6 locations with her folks. Allison’s brother, Sean, is also an integral part of their operations, and her son just
started with some part-time summer work. This truly is a family affair and a legacy to be proud of!
Don’t be fooled into thinking that just because Papa Murphy’s is a nationwide chain that they are all corporatelyowned! Many franchisees are small “mom and pop” teams; local citizens who live in and care passionately for their communities. Allison and her family are incredibly generous and dedicated members of the community. They donate a lot of time, effort, and money towards supporting all of the communities they serve. They work constantly and very closely with Our Giving Table, local schools, and local sport clubs (like Sherwood Youth Cheer) to help raise funds. This is the key difference between corporate-owned chain restaurants and a locally, privately-owned “mom and pop” restaurant like Sherwood Papa Murphy’s; the Kenneys live in, work in, and support their local community!

F
inding the right auto service provider for your vehicle is never an easy task. Generally speaking though, we’re all looking for the same thing: someone we can trust. We want to take our vehicles to an organization that is well established, that employs ASE-Certified technicians, and that has a visible track record of success which we can access. In short, we want to take our vehicles to a shop like Lance’s Superior Auto Service right here in Wilsonville!
on newer European vehicles. They specialize in Asian and domestic makes and models, but can do general work on some European vehicles. If in doubt, they recommend calling first to see if they can provide your required service.
Why Lance’s? Well, for all those reasons listed above and more. Lance Griffin has been in the industry since 1978. He started working at a Chevron Station pumping gas in high school, then went to their tech school, where he took every course they offered. In 1982, he returned after testing and acquiring full ASE Certification (a designation that requires re-testing every 5 years to maintain), and worked as a technician for Chevron for another 14 years. An opportunity arose in 1996 for him to open his own service shop, and that was when Lance’s Superior Auto Service was born.
Lance is one of the greatest guys you’ll ever talk to. He is a local, born and raised, and truly cares about this community. He built his business on one solid pillar: treat your customers like friends and family. Beyond that, conduct business with absolute transparency. He believes in educating his customers, not selling them, so Lance’s will never do work that you’re not fully educated about, and you will never pay for anything you’re not prepared for.
In the beginning, he had 2 employees and leased a 4-bay garage that was on the same lot as the Chevron station where he had previously worked. As the business gained traction and word of his “superior service” spread, he needed to find a larger space. In 2004, he moved to the location where he still resides today; a prime location which boasts 7 bays, an alignment machine, a nice waiting room, and everything else you could ask for in a service shop. They are a general service shop, covering all of the bases from A-Z with only a few exceptions: they do not rebuild transmissions (although they can replace them), and they can’t reprogram computers 10

PLANNING FOR WINTER EMERGENCIES
A
s winter looms, so does the prospect of storms and inclement weather capable of wreaking havoc on both life and property. Planning ahead for weather emergencies can safeguard your home, as well as your loved ones. The following tips will help you prepare for the worst that nature might throw your way.
Property maintenance is a preventative measure that may help avoid or mitigate damage to one’s home. Attend to tree branches that could break in high winds or freezing conditions. Consider purchasing a portable generator in case power is out for an extended period.

Assemble an emergency kit. Be sure you’re equipped with extra blankets, flashlights with extra batteries, a batteryoperated radio, a first aid kit, a fire extinguisher, and enough prescription medications to last at least a week. Stock up on non-perishable food and water. Provisions should be adequate to last your family a minimum of three days. Regrouping locations. Families should establish locations both on and off their property to rendezvous should they become separated during an emergency. Family members should learn basic First Aid and CPR should a medical emergency occur.

Check that walls and attics are properly insulated, and that doors and windows are weather-stripped and adequately sealed. Inspect and clean chimneys, and make certain heating equipment is in good working order. Insulate pipes. If freezing temperatures are forecast, allow faucets to drip to avoid freezing solid. Monitor fuel supplies. If your home is heated via propane, oil, or wood, be sure you’re adequately stocked should an extended storm hit. Stock up on water. In addition to bottled water, filling one’s bathtub with water as well as extra containers will help address a host of water-related needs from drinking and cooking to flushing toilets. 18

Winterize your vehicles. Have your mechanic check wiper blades, ignitions systems, batteries, antifreeze, lights, heater, brakes, defroster, and oil. Inspect your tires to ensure that they have adequate tread. Be certain that the type of tires mounted on your car will be effective in inclement weather. In certain climates and jurisdictions, chains or studded tires will be required for travel. Keep the following items in your vehicle: • • • •
A windshield scraper and small broom A bag of sand to create traction for tires in snowy/icy conditions Matches stored in a waterproof container A brightly colored cloth to tie to your antenna (preferably neon orange, yellow, or red) • An emergency kit (including first aid supplies, warm clothing, a flashlight, and blankets). • Keep gas tanks full and batteries charged (for electric vehicles) in the event that you are required to leave your home.
Pets
Bring your pet animals indoors. Outdoor animals should have an area where they can be sheltered from severe winter conditions. Grazing animals should have a protected food supply and a non-frozen water source. Many of us won’t find time to address every item listed above; however, any preparation is better than none. A little forethought can go a long way when winter weather hits.

The History of Sherwood By Robert Matsumura, Contributing Writer
H
ave you ever wondered how the town of Sherwood came into being? Does the town’s name have anything to do with the Sherwood Forest of Robin Hood lore? The answer to this question traces back to an early pioneer by the name of James C. Smock and the eponymous town he founded in the late 19th century, which would grow to be the town of Sherwood we know today.

construction of a narrow gauge railroad. This shrewd move ensured that a station would be built on his property and connect his fledgling community with the rest of Oregon.
Located inland along the old Oregon City-Lafayette Wagon Trail, which crossed the A.Z. Hall Donation Land Claim of the 1850s, the land upon which today’s Sherwood is built, was originally purchased by one of the early settlers to the area, James C. Smock. Smock had arrived with his mother and adopted family, the Halls, via the Oregon Trail when he was four years old. Smock’s original land purchase included a family log mill which he continued to operate, and adding shortly thereafter, a grain mill and supply store.
Anticipating the growth the Ja m e s C . S m o c k railroad would bring, Smock laid out the nine square blocks that would one day burgeon into the town of Sherwood. The original name chosen for the town, however, was Smockville, in honor of its founder. Smock relocated a house built by A.Z. Hall into the center of the new town, which became known as the Smock House, which is now a part of the Sherwood Heritage Center. Railroad Street became the main thoroughfare of the new community, and Seeney Hall functioned as the office for the city council.
In 1868, James married Mary Ellen Sebastian and the two traveled to Nodaway, Missouri where Smock was born. During this trip, Smock became interested in the railroad, and in 1883 he signed an agreement with the Oregon and Transcontinental Railway Company for right-of-way across his Oregon property for the

An expert in the brick business was hired from Kennedy Co. of Chicago to install press brick machinery. The establishment of a major brickyard in Smockville created a boom for the town.

produce was regularly trucked to Portland and surrounding communities, thus broadening the market for Sherwood’s agricultural products. By the 1920s, the local Cipole onion flats had become the top producer of onions in the entire Northwest. For much of the 20th century, Sherwood was an agricultural community, but in 1970 the cannery finally closed. By this time, however, the Portland Metro area had expanded outward to encompass Sherwood and its neighboring towns into a larger suburban landscape.
Initially, the brickyard ran night and day, employing up to a hundred men. The wood for firing the brickyard kilns was harvested from the pine forests which surrounded Smockville. Many of Portland’s 19th century brick buildings were constructed with bricks from the Smockville brickyard. By 1895, the brickyard had run its course. Likely due to mismanagement, and possibly the Panic of 1893—an economic depression that affected the entire country for four years—the brickyard ceased operating for good. Shortly after the brickyard closure, a fire ravaged the town, destroying much of its business district. Only the mobilization of local citizens into a bucket brigade saved the town. In 1911, another fire broke out in Sherwood which, in the aftermath, moved the city council to recommend all future buildings in town be constructed with fireproof materials such as brick. Due to the brickyard, significant money and manpower had swelled Smockville
from an insignificant backwoods outpost to a thriving town with hotels, saloons, stores, and a large livery stable. And as Smockville continued to grow, so too did the dissatisfaction with the town’s name. Many locals, including some of the town’s leading businessmen, felt the name, Smockville, lacked the dignity befitting their community. Thus in 1892 a meeting was convened to generate a new name for the town. Robert Alexander, a local businessman who originally hailed from Sherwood, Michigan, suggested the town be named Sherwood. He suggested that the forests surrounding the town evoked the famous Sherwood Forest in England of Robin Hood lore. The name, Sherwood, caught the fancy of those at the meeting, and moving forward it was adopted as the town’s legal name. Despite the closure of the brickyard, Sherwood continued to prosper. Located amidst rich agricultural land, the town became a hub for a constellation of farms that grew in number as the larger land grant farms were subdivided into multiple parcels. By the early 20th century, much of the agricultural land around Sherwood was dominated by orchards, and in the location of the old brickyard a cannery had been established. The cannery, the Portland Canning Co., processed a variety of goods, from apples, pears, and plums, to beans and even sauerkraut. With the completion of Highway 99 circa 1919,
Inspired by the town’s name, Sherwood, during the 1940s young men from various community groups formed a “Band of Merry Men,” reprising the roles of the various characters from the Robin Hood tales. The town’s Merry Men would serve as ambassadors of Sherwood in events throughout Oregon, including parades and festivals. In 1952, the “Robin Hood Festival” was created in Sherwood to celebrate the town and promote local groups and businesses. The event continues on to this day, featuring a medieval theme and includes archery contests, medieval enactments, a parade, and music. Food and drink from local restaurants, breweries, and vineyards are also a highlight of the festival. So the next time you happen to see a brick building in the Portland Metro area from the 19th century, there’s a good chance its bricks were produced at Sherwood’s old brickyard. And though the endless forests once surrounding Sherwood are long gone, the whimsical name and the Robin Hood traditions live on as a reminder of the town’s rich past.
