Brenda says. “Everything is fresh in terms of ingredients and preparation, and it’s a healthier menu in general than you find in most places. We really wanted to invest in something we could be proud of.” Open since November 2023, the Great Greek features all the classics, like The Great Greek Gyro, featuring your choice of beef and lamb or grilled chicken with lettuce, tomatoes, red onions, tzatziki, and feta wrapped in a warm pita. “Our tzatziki is made with labneh, so it’s thicker and so delicious,” says Brenda. Souvlaki plates are also a customer favorite with tasty options like grilled chicken, steak, Australian lamb or garlic shrimp served with rice pilaf and your choice of French fries or the famous feta fries. If you’re really hungry, try the Athenian Burger, a half-pound grilled certified Angus beef patty topped with chopped lettuce, tomato, red onion, tzatziki, and feta. A selection of fresh salads, bowls and wraps are also available, and a kid’s menu for the little ones with choices like cheese pizza or a kid’s size souvlaki plate.

The Great Greek Mediterranean Grill franchise has recently come to Oregon, and the only location in the Portland area is right in Tigard, off Scholls Ferry Road. Prepare to be delighted by their authentic flavors and a fastcasual dining experience for the ultimate convenience! After working for years as a general surgeon, first in the U.S. Navy and then in the Portland area, franchise owner Brenda Schmidt discovered The Great Greek while looking for a new venture to create more flexibility in her life. “When you’re a surgeon, the days and hours are long, and I was spending less and less time with my family,” she says. The Great Greek is rooted in Las Vegas, where neighbors Nick Della Pena and Trent Jones first purchased a familyowned Greek restaurant looking to sell and transformed the traditional recipes and warm environment into a winning franchise that has grown to over 30 locations across the U.S. Brenda and her daughter, Allea Cook, traveled to Vegas together to research the opportunity. “We loved the food,”

Baklava is always a treat for dessert, but there are others, all rich and filling. “The Baklava is baked fresh in-house,” Brenda says. “So is the rice pudding. The most unique option is our Baklava ice cream, where we crush the fresh Baklava and mix it into vanilla ice cream.” If you can’t decide, order the dessert sampler and get a taste of everything! The fast-casual atmosphere at the Great Greek makes it the perfect place to grab a bite with friends or get in and out quickly with a freshly prepared meal. Customers can order at the counter and are given a number for their table. “If you order
multiple items, we bring your food as it comes out, so everything is hot and fresh,” explains Brenda. The Great Greek is already enjoying seeing regular customers. Brenda and Allea, who work together at the restaurant, were both born and raised in
the Tigard Beaverton area and only live a couple of miles from the restaurant. Giving back to the local community is important to them. “We’ve done fundraisers for South Ridge High School and Oregon Food Bank,” says Brenda. “This is our home community and having a local business is a great way to get involved; it’s one of the reasons we wanted to open this restaurant.” The Great Greek offers dine-in or take-out with online ordering and delivery through Doordash, Grubhub, and Ubereats. ince opening her first salon in 2013 in Lake Oswego, Kirstin Estes has seen her Lux Tan & Cryo Wellness Spa expand to five business locations throughout the Portland metro area in just over 10 years. Estes is excited to announce the two latest locations of the Lux Tan family: one in her hometown of Beaverton, the other in Tigard. Estes has built a business now with health spas in West Linn, Oregon City, Lake Oswego, Beaverton and Tigard. The two newest outlets opened in the summer of 2022. “I worked in tanning salons all through college and fell in love with the industry,” Estes said. “I really like it when people come into my business and leave feeling better. Looking good and feeling good is what we’re all about.” Lux Tan provides a long list of beauty and wellness services, including tanning, red light therapy, facials, cryotherapy and various body slimming treatments. Estes said her goal is to always keep on top of the latest trends and have the latest equipment available for her clients, both men and women.

Red light therapy is one of the latest trends. “It helps promote ATP throughout the body. Helps you feel really good if you have any aches and pains. Helps with soreness. Helps with inflammation, better blood circulation and promotes collagen,” Estes said. “It’s a beauty bed, but also a feel-good bed that’s going to help internally as well. It helps heal injuries faster.” Cryotherapy is another popular treatment at Lux Tan. Also known as cold therapy, cryotherapy uses very low temperatures to promote pain relief and wellness. Think of cryotherapy as the modern equivalent of an ice bath, with more benefits, less discomfort and no hassle. Trained cryotherapy technicians use equipment to produce extremely low temperatures using liquid nitrogen vapor. Taking care of a growing business Cryo T-Shock is too much for one person to handle on their own. Estes has a staff of 15 employees, five of them in Beaverton, to help her. With no immediate plans to add more locations, Estes plans to concentrate on the five she has and keep tabs on the ever changing beauty and wellness industry. “I’m going to focus on the five that I have,” she said. “It’s quite a lot for just me, but I have really good managers, a really good staff and a really good crew.” When she’s not running her business, Estes keeps busy taking her children Layla, 8, and Eli, 6, to sports activities. When restaurant owner Victor Lopez decided to open his second La Sierra location, he knew Sherwood would be the perfect place. Family-owned and conveniently located right off 99W, the new La Sierra Mexican Grill is open for business! Victor is excited to bring the best fresh, authentic, scratch-made Mexican cuisine to the Sherwood community. The first La Sierra is in Dundee and has been a treasured spot among locals since 2001. They’ve expanded their space over the years to accommodate more customers and eventually decided to open a second location. “It took us a long time to decide to open it,” explains Victor. “We started in a little place in Dundee, and now we operate in an 8000 square foot space.” Victor credits his success to his customers. “The community is what makes a business. You have to support the community, too, as a business owner.” The new location already has a local following. “We have a lot of customers from Sherwood in Dundee, and they’ve always said we should open a location here,” Victor says. “I was thinking about it, but then the pandemic hit. The History of Chocolate Ancient, delicious and divine

W
hen we hear the word “chocolate,” most of us picture a bar, ice cream, baked goods, or a confection of some type. Typically eating chocolate, not drinking it, and a sweet taste is usually associated with chocolate rather than a savory one. However, for approximately 90% of chocolate’s extensive history, it was primarily a beverage, and sugar didn’t figure into the equation at all. While the terminology can be a bit puzzling, most contemporary experts refer to “cacao” as the plant or its beans prior to processing, while the term “chocolate” refers to a product made from the beans. “Cocoa” is the term for chocolate in powdered form, though across the Atlantic, the British frequently use the word “cacao.” “Chocolate” has been traced by etymologists back to the Aztec word “xocoatl,” which described a bitter beverage brewed from cacao beans. The Latin name for the cacao tree,

Theobroma cacao, translates to “food of the gods.” Historians today estimate that chocolate has been around for at least 2000 years, but recent research suggests it may be even older. Although it’s difficult to establish an exact date for the origin of chocolate, it’s evident that it was valued from the very beginning. For many centuries in premodern Latin America, cacao beans were actually used as currency. A single bean could buy one tamale, while 100 beans could be traded for a good turkey hen, as noted in a 16th-century Aztec document. Both the Mayans and Aztecs considered the cacao bean magical and sometimes divine. It was commonly a part of sacred rituals of birth, death, and marriage. It wasn’t until Europeans discovered the Americas and became familiar with the native cuisine that chocolate made its entrance on the world stage. According to legend, the Aztec king Montezuma welcomed the Spanish explorer Hernando Cortes with a feast that included drinking chocolate. Although chocolate didn’t initially agree with the European palate, once it was mixed with honey or sugar, it rapidly grew in popularity throughout Spain. By the 17th century, Europeans had embraced chocolate as a glamorous drink, reputed to possess medicinal, nutritious, and even aphrodisiac properties — rumors suggest that Casanova was a
big fan of chocolate. But it remained primarily a drink of the upper class until the invention of the steam engine revolutionized chocolate production, resulting in chocolate becoming available in mass quantities to society at large. It was in 1828 when a Dutch chemist devised a method to create powdered chocolate by filtering out approximately half the natural fat (cacao butter) from chocolate liquor, pulverizing what remained and introducing a mixture of alkaline salts to negate the bitter taste. This product, known as “Dutch cocoa,” eventually led to the development of solid chocolate. Joseph Fry, in 1847, is credited with the creation of the world’s first chocolate bar. Fry discovered that by adding melted cacao butter back into Dutch cocoa, the result was a moldable chocolate paste. Within 20 years of Fry’s discovery, the now famous company Cadbury was selling boxes of chocolate candy in Britain. Soon thereafter, another recognizable name, Nestle, pioneered the creation of milk chocolate in Switzerland.
During the Revolutionary War in America, chocolate was so valued that it was included in soldiers’ rations in lieu of wages. Most of us today wouldn’t likely settle for payment in chocolate over dollars, but that doesn’t mean the
humble cacao bean isn’t a potent force in the economy. In the U.S. alone, chocolate is a four billion dollar industry, and the average American consumes at least half a pound per month.
In recent times, a chocolate revolution has swept across the globe, marked by a burgeoning interest in high-quality, artisanal chocolates and sustainable, efficient cacao farming and harvesting techniques. Due to this shift in consumer tastes, large corporations like Hershey’s have developed artisanal chocolate lines by acquiring smaller premium chocolate producers, and independent chocolatiers have proliferated as well. Here in the Pacific Northwest, artisanal chocolate has exploded in recent years. One of the first chocolatiers on the Portland scene was Moonstruck; though recently sold to a larger company, Moonstruck helped establish a market for gourmet chocolate in the city. Currently, there are a plethora of artisanal chocolatiers in the local area. Missionary Chocolates in Northeast Portland, founded by a doctor with a passion for chocolate, produces delicious dairy-free, gluten-free, vegan chocolate and non-allergenic truffles.
