Notes from the Editor
Memories of Black Box at the Roller Disco I was in Broadbridge Heath recently for the official unveiling of The Bridge Leisure Centre. Personally, it’s not an occasion that’ll live long in the memory, although I was given a ‘media tour’ by a knowledgeable and enthusiastic member of the Places Leisure team, on which I met journalists from local publications or websites that I’ve genuinely never heard of. A short time later, various councillors gave themselves a congratulatory pat on the back as one of their number (the one wearing Mr T’s chains) cut the blue ribbon. They then rushed to the front of the queue for nibbles; they’ve been to enough ceremonies to know that there’s nothing worse than being left with egg cress sandwiches. Few people present were paying much attention to the Tanbridge House School choir, so I went over and listened to them performing a Queen medley, which was rather good. I gave one of the pupils my ‘goodie bag’ as he looked even more bored than I was. Presumably, that was a joint result of nobody listening to them and having the superb Clip ‘n’ Climb facility right there in front of them but not being allowed to go on it.
I returned a couple of days later, as Toby took photos of children enjoying the clip ‘n’ climb, an activity that will undoubtedly create special memories for thousands of young people in the coming years. And it made me think of my own memories from The Rec, formerly known as the Park Recreation Centre. I used to go to the roller disco there, joining the masses in a circular motion around the sports hall as Ride on Time by Black Box, Good Life by Inner City and Get Up (Before the Night is Over) by Technotronic played in an almost constant loop. Years later, my parents revealed that they would watch from the balcony for a few minutes after dropping me off and would fall about laughing, as I was such a dreadful skater. I’d practically be running in my hired blue boots in an effort to keep up with my friend Karl, who had his own pair of Bauers. He was so good, he could go backwards. During the school holidays, I’d attend the football camps run at The Rec. There was always this old coach with a broken nose, who didn’t take any nonsense. There was a rumour that he used to play for Spurs, although nobody really believed it. That man was Mel Hopkins, who played over 200 times for Spurs and 34 times for Wales. I discovered that when I met his widow, Barbara, when writing Mel’s obituary in 2010. She shared her own fond
memories of The Rec, as it was where she met Mel in the 1970s, playing table tennis. There is a new team running The Rec and they plan to restore its reputation by improving the bowling and laser quest facilities, as well as hosting live music and comedy in what used to be Shelley’s nightclub and is now The Rec Rooms. They are the first to acknowledge that they have their work cut out. I last took my sons there when it was still run by the previous team. We had a dreadful time. The laser quest was closed and only one bowling lane was open. After the fourth time of it going wrong, we gave up. Sadly, many others had a similar experience. From the outside, you wouldn’t think much has changed at The Rec. But inside, it’s being transformed and the new managers are determined to succeed. As a community, we should support them. Laser quest and ten-pin bowling may not excite children today in the way that a Clip ‘n’ Climb might. But such activities can still be part of a great family day out in and around Horsham Park. The Bridge is wonderful and will serve the needs of our fast-paced modern society. But The Rec is not yet a relic. It too has much to offer and it would be a shame to see it consigned to merely a memory.

HITS The Bridge Leisure Centre in Broadbridge Heath opened on Friday 19 October. The £12.3million facility, which replaces the adjacent Broadbridge Heath Leisure Centre, impressed thousands of visitors during its opening week. Whilst it might not be immediately apparent where the entrance is, inside is a superbly-equipped gym with more than 70 stations. The sports hall caters for basketball, badminton, table tennis, trampoline, basketball and can even host a huge inflatable fun zone that has already generated a buzz. Due to Sport England recommendations, the hall has been painted drab green (it’s one of the few colours suitable for badminton). That aside, the centre is light and spacious. The Bridge also has five outdoor courts, three studios (including an indoor cycling studio) athletics track, café, meeting room and a sensory room, which transforms from a calming, soothing place to an engaging interactive space full of light and sound. The Horsham District Council facility will be managed by Places Leisure, which also operates The Pavilions and Steyning leisure centres. Staff worked tirelessly

Clip ‘n’ Climb Younger visitors in particular have been enthralled by a fantastic new climbing facility, Clip ’n Climb. After a safety briefing, children and adults can enjoy challenges including: Aliens A 7.5m problem-solving challenge. LED lighting in the corner moulds add interplanetary atmospherics as you climb to avoid aliens and reach the top. Astroball This 7.5m climb requires courage and great agility. One of the tougher activities, Astroball features nine spheres delicately balanced on top of each other. Stairway to Heaven You’ll need nerves of steel and a head for heights as you walk up the stairway to a 7.5m summit. Twister A climb that requires agility as you twist and turn your way to the top through coloured steps.

Hands-on Treatment By Wendyanne Harrison (MCSP)
Owner, Cranfold Physical Therapy Centre Physios are keen people. They love treating their patients. Reducing their pain, getting them back to what they love to do, and getting those beaming smiles (and sometimes hugs!) when your patient realises that they can indeed walk upstairs now, or run again, when they have been unable to do so for some time, is a real joy. I have been in physiotherapy for over 30 years now and it has always been a changing profession, as we learn more. Currently there is emphasis on only using “evidence based“ treatments. “Well, rightly so”, you may think, and of course we all want to do treatments that we know work. Most of the evidence is around exercise – and this has led to the current trend for “hands off” physiotherapy and the giving out of advice and exercise programmes. But is this ALL we should and could be doing? People are movement machines and by moving, our blood flow increases, the oxygen to our tissues increases, our joints become lubricated, our muscles lengthen and strengthen… But if our patient doesn’t understand these effects or doesn’t think the physio cares about their recovery, doesn’t make an appointment to see them again, or doesn’t make time to ensure the exercises are being done properly – the chances are the patient won’t do them. And if you don’t do them, the exercises definitely won’t work. Many physios will tell you from their experience that there are lots of other treatment modalities that also definitely work. How do we know?
“We can reduce pain levels and increase movement in most patients by using manual therapy.” Because we can see immediate differences in patients’ problems after doing these treatments. So, why is there little or no “evidence” for these? Perhaps the research has just not been done on that particular treatment. Or sometimes it’s too difficult to isolate just that one treatment from all the other things that affect the patient in a session, such as our touch, a smile, feeling welcomed, the medical environment, the words we use, the reassurance felt that the problem is being dealt with. These are all influencing the patient’s brain and thus their body’s chemical and physiological response to the whole “treatment experience.” So what are these other physio treatments we can do? At Cranfold we believe your treatment time is to be used for you - the
patient’s - benefit, and that we need to provide what you cannot do for yourself. We expect to use many tools from the “physio skill box” during sessions, including manual therapy as an almost routine expectation, where clinically indicated. I believe that we can reduce pain levels, and increase movement in most patients using manual therapy, thus giving them a tangible improvement immediately after treatment. Other modalities such as taping, acupuncture, electrotherapy, time taken carefully going over exercises, and advice are all expected to be considered too. Finally, a strong patient–physio relationship is vital. If you trust your physio knows what he/she is doing and talking about, you’re probably going to do what he/she says: if you do what he/she says, you probably WILL improve – because he/she actually does know what he/she’s talking about! A campaign for a food waste collection service in the Horsham District is gathering momentum. What started as a discussion between friends Lucy Holloway, Inga Geach and Claire Lyon has led to an online petition that has generated more than 600 signatures, along with support from local church groups and members of Horsham’s Green and Labour political parties. Lucy said: “We are passionate about the environment. Having watched programmes including Blue Planet and heard the report by the IPCC (Intergovernmental Panel on Climate Change), we discussed ways we could make a difference. Issues surrounding plastic and the impact of the fashion industry are under the microscope, which is a good thing. But on a local level, we could make a positive change by introducing a weekly food waste service. “I'm originally from Guildford, where there is a food waste service, and I have lived in
London, where there is a food waste service. It is collected in Surrey, Lewes, Kent and Mole Valley, yet no such service operates in West Sussex. It will become mandatory in 2023, so we’d like to see HDC become the first local authority in the county to introduce it, as food waste is an urgent issue now.”
Financial Benefit A parliamentary report by DEFRA (Department for the Environment, Food and Rural Affairs) estimated that in 2015 alone, UK households threw away 7.3m tonnes of food. If prevented, this would have had the environmental benefit of taking one in four cars off the road. About half of England’s households have a food waste collection service (in Wales, that figure is far higher), but here in the Horsham District, most people throw leftovers and food waste (egg shells, tea bags, vegetable peelings, banana skins) into residual waste bins.

The campaigners would like to see a small ‘caddy’ for food waste distributed to households in the district. The caddy could be emptied into a larger bin (perhaps for use by other households too) and this would be collected weekly by the council.
All of this waste could instead have an economic benefit, as it can be turned into energy. Biogas is produced as micro-organisms break down rotting organic material. This biogas can be used to create energy, fed directly into the National Grid. Digested waste is also converted into renewable fertiliser. This process is known as Anaerobic Digestion (AD). The Biffa plant in Warnham, where our rubbish goes, has an Anaerobic Digester, ensuring some of our food waste can still be recycled and not just dumped in a landfill site. So, you may wonder why each individual household needs to separate food waste... Rosemary Couchman, who has joined the campaigners, said: “Capturing food waste at source, in each household, would be a far better option. The Mechanical Treatment Plant at Biffa cannot remove things like egg shell fragments and coffee granules, so some waste is lost. Also, the food waste that is collected can be contaminated by plastics or other materials. By separating food waste at source, it would be a far cleaner process and result in a better grade digestate, which would have financial benefits.”

Using the caddy system would make people more aware of what they are throwing away, says Inga. “When food waste is visible, you’re more conscious of how much you throw away. If you have tomatoes nearing the sell-by date, you’re liable to chuck them in the bin. When you put them in a caddy, they’re visible and consequently you plan meals more carefully to create less waste. “We've seen collections reducing to every other week for household waste, so the council is making a saving. Supposedly, that decision was made with the intention of increasing recycling rates. A caddy is a relatively small price to pay to enable residents to make a difference and encourage them to recycle food waste. Unfortunately, the council doesn’t appear to be in a hurry to roll out such a scheme. It seems strange that it employs people as ‘sustainability experts’ and yet it is residents that are trying to convince them to do this!”

The latest Set4Success (S4S) award winners will be announced at a ceremony at South Lodge Hotel on 9 November. Set4Success is a remarkable fund which supports talented young sportspeople in the Horsham District. With costs involved in training and competing at a high level often a deterrent to ambition, S4S provides selected individuals with a financial award that helps them with coaching, travel costs, equipment or clothing. Successful applicants will also receive concessionary access
to sports facilities, to help with training. At November’s ceremony, awards will be given to 17 people who have excelled at their chosen sport. The special guest speaker will be BBC Sports broadcaster Simon Brotherton, whilst S4S patron Mike Goody (who won two golds at the Invictus Games in Australia) will be presenting a special award to a past winner who has gone on to achieve significant success during the past year.

Red Deer Rutting Season at Warnham Park
Warnham Park is world-renowned for producing red deer with superb antlers. In 2016, a pure Warnham stag on the privately-owned park set a new world record Safari Club International (SCI) field measurement score of 763. September to November is breeding season, with October being the best time to witness rutting at the park. Stags (males) compete for the hinds (females) by engaging in elaborate displays of roaring, parallel walks and fighting, with dominant stags claiming exclusive mating rights. Mark Jennings, herd manager at Warnham Deer Park, said: “The best time to see the rut is around 10 October. Usually, stags weigh each other up without engaging in combat. There’s a lot of roaring through the night and early morning, with activity dying down as the temperature rises. When they do fight, it can end in serious injury or death. Occasionally, we lose a prize-winning stag in a rut, but you must allow nature to take its course.�
“We haven’t lost any deer through fighting this year, but it has happened. Many years ago, two stags died together when one stag’s antler speared the other and they couldn’t be separated. “We’ve not seen many challenges this year, although some promising young stags are coming through and they will be better placed next year. Some are canny and will sneak in as two stags are fighting and

REJUVINATED A new team has taken over The Rec in Horsham with the aim of rebuilding its reputation.
Since stepping in six months ago, the management team of Nick McDowell, Graham Kempster and Stuart Green have been improving the facilities at The Rec, on the fringes of Horsham Park in Albion Way. Graham said: “As Horsham residents, we could see that the building was being mistreated and no money was being invested. Essentially, The Rec was dying. We recognised its potential and felt we could turn the place around. “The greatest challenge we face is changing people’s perception, as we’re fighting against everything that was wrong before we arrived. There was a laser quest that didn't have any working guns and a bowling alley that didn't have any lanes open.
“Downstairs, since Shelley's closed, the nightclub has been rebranded a couple of times, playing generic house music that didn’t earn it a great reputation. It’s meant that we’ve been having to win back one customer at a time.”

Whilst there is work to be done to the aesthetics of The Rec, the laser quest is running with a complete set of new equipment, whilst a diner has recently opened. However, it is the transformation downstairs, in The Rec Rooms, that is most impressive.
Striking decoration incorporating everything from drum kit lighting appliances and a dazzling array of hanging guitars to pillars plastered entirely with old cassette tapes and rock music magazine covers) has been matched by investment in sound technology. This has attracted bands including the Rufus Black Band, The Blue Bishops and the renowned James Taylor Quartet. ASSISI So, who’s this then? Anouska Assisi, a 16-year-old singer/songwriter who recently released her debut single, Dark of the Night. Any good? It’s a catchy number, perhaps the feistiest track of her EP, Rewind, which will be released shortly. Anouska’s songs are greatly inspired by the style of her musical hero, Ed Sheeran. Acoustic ballads about meeting girls while drinking beer then? The similarity comes more from the style, as Anouska loops her vocals and adds percussive touches to create a modern pop sound. “I love playing with the loop pedal to build layers of sound,” says Anouska. “I add percussion elements with the guitar, but you won’t hear electro beats and synths as I like to hear the true vocals of a song.”

Has she been singing for long? When Anouska was nine, she was inspired to pick up a guitar after watching a boy play an electric guitar at a school concert. It wasn’t long before she was writing her own material. “I made up songs for Mother's Day, Father's Day and birthdays,” recalls Anouska. “They were cheesy and everything rhymed!” What does Anouska write about now? Several songs including Good and Bad Days, Hold On and Can’t Take It No More, are about bad relationships, although not necessarily her own. “In my family, some relationships haven't gone well, so I often write from the perspective of others. Songwriting comes quite easily to me and it’s such a great feeling when I finish a song and perform it for the first time.” Does she perform live? Anouska is studying music at Hurtwood House, but outside of college, Anouska takes any opportunity to perform live. As well as busking, she supported Emma Stevens at The Rec Rooms and has played pubs including The Three Crowns in Wisborough

Anouska likes to hit the streets of Guildford, performing covers as well as original material. It makes her a little money and it’s a good way of picking up social media followers. Is that important? Increasingly so. A good following on social media can convert to more listens on sites such as iTunes and Spotify. The more people who listen, the more chance an artist has of attracting the interest of a recording or publishing agent. Anouska said: “I'm not a huge fan, but I have to do it otherwise people won’t hear my music. It’s difficult, as so many people are trying to do the same thing. SWEET TASTE OF SUCCESS When Harry Daymond was 15, he attended a wedding where a small bowl of sweets attracted great interest.
This triggered a business idea for the teenage entrepreneur. “It wasn't just kids,” recalls Harry. “People of all ages were drawn to the shrimps and flying saucers, as the sweets took them back their childhood. I thought that there was a business idea there.” Harry loved to build and fix things with his grandad. So, the two of them spent every weekend over one summer building a
collapsible vintage cart to be used as a sweet stall. Harry then designed a logo, printed business cards, built a website, and before he’d completed his GCSEs was the founder and CEO of Kart Kompany. “I started by approaching venues, attending open days and wedding fairs,” said Harry. “I learned through networking about things like food hygiene ratings and business insurance. Gradually, bookings came in, although my parents had to drive me to weddings as I was too young!” Now established four years, Kart Kompany
continues to develop. In 2017, Harry’s business teacher at Collyer’s encouraged him to enter the Young Start-up Talent competition, a national initiative. After attending workshops and interviews, it culminated in a Dragon's Den style pitch at Thales Group in Crawley, where Harry triumphed in the Gatwick Diamond region to win £50,000 worth of investment.

Iris Bishop I make unique individual garments, accessories and textile designs using a variety of materials and fabrics, including sari silk, the remnants of silk from sari mills. Some garments are entirely made by hand, which gives them an ageless appeal, as they could have been made 5,000 years ago. I've been a weaver and a knitter, so I use different techniques, depending on what I’m making. Some require a concealed knitted yoke, so it is shaped to sit on the shoulders. I also design my own prints on silk fabric. There is a fantasy element to these designs, with connections to local destinations, including South Downs Way. I like to knot pieces loosely, so the item offers freedom of movement and when you put it around your body, it’ll gradually mould itself
to you. Most clothes sold in High Street shops have been made with one flat piece of fabric with a seam, so it's two-dimensional. My pieces are three dimension and because of that, they flow. I’ve never needed to sell outside of these type of events. I started by exhibiting with Janine Gray, a sculptor and artist from Cowfold, before joining HAOS. Commissioning a piece by a textile artist is no different to commissioning a painting. These are not off-the-peg items, but wearable art. For the Art Fair, I created my own take on Banksy’s shredded artwork. When I saw it on TV, I thought his shredded piece looked exactly how my textiles start out. Holly Dale I combine my passions for sewing and technical drawing to create art using a technique called free machine embroidery. This gives me control over stitch movement and allows me to build layers of fabrics. My work tends to depict wildlife and all of the animals mean something to me personally. However, most people want to talk about the pigeon! I was in Brighton with my partner and a pigeon stopped in front of us as we sat in gardens. It spent a few minutes with us and we had a shared experience with this one bird. Now, he has been immortalised on a canvas 200cm x 190cm! It took me several days to prepare for the sewing stage, as the dimensions needed to be perfect. I covered my wardrobe with paper, stuck together with Sellotape, to draw the outline and details. Then it took 55 hours to sew, with 15 needles broken in the process. It was a huge challenge to make something at such a scale. People ask me why I chose a pigeon out of every animal in the world. They are quite vilified and I've even seen motorists speeding up to hit them in the Carfax. Yet when we carried the canvas through town because it wouldn't fit in the car, people were fascinated by it.

Sue Collins I primarily create limited edition lino prints. Most of my art is inspired by the countryside and depicts a stylised perspective of rural scenes. Every day, I walk with my dog and I can see the South Downs Way from home. I previously designed textiles, selling to various companies, including IKEA. That experience and knowledge has certainly influenced my art. Recently, I altered my production technique to make my work more colourful and layered. Initially, I used a one-colour print process and added shapes and patterns with the back of a spoon! But 18 months ago, I invested in a printing press. My method is time-consuming and intensive. It involves individually cutting out elements and printing them in one colour at a time. First, I cut everything that I want to remain white, then work through gradually darker tones. With every layer, ink is applied to the raised print surface. Gradually, I add yellows, greens, blues and blacks, waiting for each layer to dry before deciding what to cut next. This process is known as ‘reduction’ linocut. I was shortlisted for Artists & Illustrators’ Artist of the Year 2018 competition, with my work exhibited at the Mall Galleries. My style changes depending on my mood, although I tend to paint happy, sunny things. I don’t like miserable things!
I've always loved comics and science fiction but only started painting five years ago. My daughter asked me to make something for her bedroom, so I created a 3-D Tardis.
I‘ve been an artist for many years, but this is my first year exhibiting with HAOS. I create portraits, seascapes, harbour scenes, mosaics and pen and ink street scenes, using a variety of materials, from paintbrushes to sticks. I like switching styles as it prevents me from becoming stuck in a rut. I’m not someone who can do the same thing every day and don’t want to be known for one style.
Now, my art ranges from Doctor Who and Star Wars characters to abstract landscapes. I have a unique style of painting on kitchen foil for abstract work, then applying acrylic paint to produce a slightly futuristic effect. I add materials to my work to produce a
3-D element. I use bits and pieces like HDMI cables, pipe cleaners, tubing and anything else I can find in my box at home. To give C-3PO's hand a golden shine, I used the inside of a toothpaste tube. At a HAOS Art Fair, no two artists are the same and we’re very proud of that. We have everything from wood turners to jewellery designers, with everything in between. That's what makes this group so strong.
Lots of people are drawn to my ‘Steven Seagull’ and ‘George Seagull’ paintings. I give each one a name. One is called ‘Smooth Criminal’ as the seagull is dancing like Michael Jackson. I often visit Brighton and take photos of seagulls, which I use and animate for my paintings. It’s often difficult for people to pick a favourite as the seagulls look great as a collection. I would like to create a canvas with nine different seagull images in a square, as they go well together. Occasionally, someone has their own idea and commissions a seagull. Greta Meeten Making art is an elaborate ‘avoiding the housework scheme’ for me! I'm always doing something creative and this is my latest project. I make ornamental pieces using driftwood along with off-cuts of timber, leather, textiles, nails and any other bits I have around the house. These pieces usually serve as a snapshot of a holiday or a memory of a seaside trip, as they have coastal themes. I also make framed pieces with a similar theme, making scenes using driftwood. Usually, these have dyed fabric in the background. For my driftwood, I go down to Goring beach or sometimes buy it from eBay. Some people pick up driftwood and sell it online as it is used for a variety of arts and crafts. I managed to find wood from a beach hut destroyed on the Suffolk coast by browsing online. There's a lovely mix of people at HAOS and it’s nice that my husband, Kevin, is involved too. Dorathea chose to write the book anomalously, perhaps because her brother was campaigning to be an MP. But for local historian’s today, her book is a gold mine of useful information. What follows are comments drawn from the book describing Horsham in the 1860s.

Dorothea wrote: “A new Roman Catholic Chapel, dedicated to St John the Evangelist and opened on 27 December 1865, was erected in Springfield Road by the Duchess of Norfolk, at a cost of nearly £2,000. The building is designed in the pointed style of the 12th century. As may be occasionally seen in foreign churches, the alter is placed at the west end. The interior is simple, with neat benches; the roof being open, with curved braces and tie-beams. A bell turret, covered with shingles, crowns the gable nearest the street. The former chapel, now converted into a schoolroom, stands at the back of the new building.”
Dorothea wrote: “Many ancient customs still linger amongst us, such as the observance of May-day, with garlands and flowers; the strewing flowers before a bride and bridegroom on their leaving the church. ‘Gooding on St Thomas’ Day is still kept up, though to a much less extent than formerly. It's difficult to detail when I have a limited word count, but in the main, lenders will stress test all mortgages against a possible rate rise and underwrite the applicants based on their ability to pay at the higher rates.

The regulators want lenders to ensure the customer can afford their mortgage for at least the next five years. So, for example, a shorter term deal may be stress tested at a pay rate of, lets say, 3% plus 3 percentage points higher than the prevailing rate at origination, so in this case 6%. However, a five year (or longer) deal may be stress tested against the pay rate, which might only be 3% in current climates. This can make quite a difference when it comes to calculating the affordable loan amount over the first five years of the loan, subject to the lenders terms and conditions. Longer term fixed rates can also be good for the end consumer as they should get the loan they want, but also the monthly payments remain fixed for the next five or more years.

St Leonard’s Forest Dorathea describes a walk to Southwater over Tower Hill and then St Leonard’s Forest, which is interesting as it shows the extent to
which reforestation that occurred in the 19th century was successful in turning what was scrubland in to a “natural” scene.
“The scenery of the forest, though impaired by the encroachments of cultivation, is still romantic and beautiful; the abundance of Scotch fir and wide expanses covered with heather and bracken, varied with fine sheets of water, may remind the sportsman of Scotland; the glades and dingles are rich in subjects for the pencil. There are also magnificent beech trees and fine oaks still remain. “Many years ago, there was an avenue of firs called “Mick Mills’ Race,” about three quarters of a mile in length. It was unfortunately nearly destroyed by a hurricane of almost unprecedented violence on the 29 November 1836; and about six years since a fire occurred, which did still further damage; so that now the avenue has disappeared and its site is only marked by seedling fir trees.”

I wish to correct the writer who claims to be a police officer and who wrote to correct the Editor in regards to a previous article about cyclists. (More Really Bad Traffic Advice, Letters, October 2018) The writer asserts that the Highway Code ‘recommends cyclists ride two abreast on the straight! No it doesn’t. Rule 66 of the Highway Code is the pertinent rule, and it says at point 3 in full: ‘Never ride more than two abreast and ride in single file on narrow and busy roads and when riding round bends.’ As virtually all of our roads in the south are busy and many that are not so busy are narrow, there will be very few occasions on any ride that a group or pair of cyclists will be able to ride
It is such a shame that so few people ever look at the Highway Code once they’ve passed the theory test. I wonder how many drivers know that they MUST give way to pedestrians who have started to cross at a road junction? two abreast without falling foul of the offence of riding without reasonable consideration for other road users, because two abreast will undoubtedly be hindering following traffic much more than single file riders!

I did pretty well, as most answers were a matter of common sense, but on several occasions, didn’t know the answer for certain. I’m sure the same applies for many motorists.
Remembering Great Men Like Fred Brenda Howlett-Nye of Kingsfold writes: Wiith Remembrance Sunday approaching, we should remember those who fought for our country, particuarly those who went through hell with no help or understanding of the terrible memories that haunted them for the rest of their lives. One man I would like to remember is Frederick Hogben. Fred was born in 1920, the youngest of five children. He grew up on the family farm near Horsham and after leaving school trained to be a game keeper. At the outbreak of the Second World War, Fred trained for a horseback regiment and guarded
the Royal family at Windsor Castle for a time. He was later involved in the evacuation of Dunkirk. Towards the end of the war, Fred was sent to help deal with the barbarous atrocities of war. He was in charge of a group of German prisoners who were given the dreadful task of cleaning up Belsen concentration camp. He witnessed terrible horrors, seeing dismembered bodies and helping those that were still alive. Man’s inhumanity and atrocities he witnessed left a lasting impression on Fred. He suffered nightmares for the rest of his life. But in those days, there was no support for troops when they were de-mobbed.
Fred built up a successful tree surgery business and later became an agricultural vermin contractor, which is how many people - including me - came to know him. He was a strict disciplinarian, often outspoken, but was a man of his word and a good listener with a dignified charm. Fred and I became soul mates, living independely, just a mile apart. One day, Fred was diagnosed with cancer and our strolls beside the brook together became very treasured moments. I held his hand as he passed away at St Catherine’s Hospice. I scattered his ashes around the place he called his ‘little patch of England’ and planted a weeping willow in his honour.

GRAPENESS Horsham has a new independent wine merchant, run by the experienced Luke Smith.
The Horsham Cellar opened in the Carfax in September and has been praised for its wine range of high-quality wines from all over the world. With special tasting events coming soon, the shop offers something new and exciting to wine drinkers. Luke explains how he plans to use his knowledge and ideas to create a unique experience… A love for wine... Wine has been a passion of mine for a long time and I’ve spent 11 years in the wine trade. I worked as a geologist for five years before pursuing my love of wine at PLB, a family-owned importer then based in East Grinstead. For four years, I travelled extensively, working in partnership with producers in Spain, Portugal, Australia,
New Zealand, California, Chile and Argentina. I developed a broad knowledge of wines, particularly those from the New World. I moved to Nyetimber, working with major retailers as well as independent shops, restaurants and pubs in Sussex, Surrey and Kent. This experience sowed the seed for me to open my own business. I put the idea to the back of my mind when an opportunity came up at French wine producer GCF (Grands Chais de France). I had never focused on French wines and France is the most famous wine producer of all, so during three years with the GCF Group I was able to really get under the skin of French wine.
An opportunity arises... I never stopped thinking about opening my own place. When I met up with my former boss at Nyetimber, she encouraged me, so I decided to make the leap. I looked at
units in Horsham, as I have family in the town and was aware that it lacked an independent wine and spirits merchant. When the former Age UK unit came on the market, I knew it was perfect for me.
Turning it around from a dated charity shop to a well-stocked wine merchants was a family effort. My dad, a carpenter by trade, built the wine cupboards and my wife, who has an eye for interior design, thought of ways to utilise the narrow space. Several other family members and friends helped with painting, decorating and transforming the basement downstairs into a cellar and tasting room. Working with small producers... I work with a small and select group of suppliers, as my focus is on family-run producers making high quality wine. They’re not big enough to supply supermarkets, but they’re producing fantastic wine. I have bottles from all over

The wines range in price from £6.99 to well over £100. When you buy a £5 bottle in the supermarket, the overwhelming majority of your money goes on excise duty, taxes and retailer margins. The wine itself will be poor value for money, so it’s always worth spending a few extra pounds. However, I have wines that deliver genuine quality at an affordable price, as they’re not heavily marketed. Ai Galera is a splendid Portuguese wine worth every penny of its £7.99 price tag. It has a beautiful label too. I'm being fair to consumers by keeping prices consistent all year round. Some major retailers inflate prices, so they can promote wines at a discounted rate for short periods. It can be very frustrating as a consumer when you find a bottle at half the price you paid for it a few days’ previously. Don’t be intimidated... Buying wine should not be scary. There’s no need to be intimidated by a wine merchants. I want The Horsham Cellar to be friendly and approachable and I’m always here to advise people. You don’t need to know the name of every grape and every wine region in the world! Just knowing if you like a dry white or a zingy citrus taste or a fullbodied red, or even knowing what you plan to eat, is enough for me to make a recommendation. That's the beauty of being independent; I have the experience to answer questions. That can be particularly useful if you’re organising a celebration or a wedding.
Small spirits range... As well as wines, I love gin and particularly whiskey. I have the same ethos when it comes to my spirits range, so we offer whiskey, gin and even tequila by small batch producers from all over the world including America, Scotland and Italy. They all have an interesting story, but they are all products that taste good. We also sell beer by two fantastic East Sussex breweries, Harveys of Lewes and 360 Degree Brewing in Sheffield Park. The wine industry grew year-on-year for decades, especially as New World wines came to prominence. In recent years, wine has endured a slight dip as the gin and whisky markets have grown exponentially. Craft ale and flavoured ciders have enjoyed a resurgence too. They’ve been more creative and adventurous with design, packaging and marketing than wine producers. However, with a little education, people will come back to wine. That is why we have a tasting table and will soon be offering sampling events. I'm hoping that people will come in and enjoy our wines and hopefully we can grow the business through positive word-of-mouth.

The Street Food Finals of the Sussex Food & Drink Awards 2019 were held in the Carfax in October. Ten vendors served taster plates to crowds and a judging panel including award-winning chef Matt Gillan and Ian Swainson, Head Chef at The Pass. With public votes also considered, three grand finalists were announced. Garlic Wood Events in Shipley combine top quality meats with seasonal ingredients, whilst Mann &
Moore of Horsham offer superb barbecued and smoked meats. The BBQ Project in St Leonards on Sea presented delicious slow cooked dishes and fishcakes with cheese sauce. All three will compete in next May’s Grand Final at the Amex Stadium, Brighton. Other finalists at the Horsham event, sponsored by Horsham District Foodies supported by Food Rocks, were Boca Loco, Box Trot, Chu Chu Burmese Kitchen, Finbar’s Flatbreads, Forgotten Cuts, Ginger Rookes and The Pig & Jacket.

A PERFECT PLATE? The Crabtree Recognised in 2019 Michelin Guide There are many wonderful pubs in the Horsham district, but it takes something special to impress a critic from Michelin. A one star rating is notoriously hard to secure and Restaurant Tristan remains the only eatery in the Horsham District to receive such recognition. The nearest restaurant to have received a Bib Gourmand award, described as a place that delivers “simple yet skilful cooking and great prices,” is The Cat Inn at West Hoathly. However, several local pubs have been listed in the Michelin Guide 2019 with a Plate symbol. This indicates a restaurant “where inspectors discovered quality food.” Those to have received this accolade include The Queen’s Room in Amberley, Chequers at Rowhook and The Crabtree in Lower Beeding. AAH visited The Crabtree to find the pub in a transitional period. Abilio Oliveira has
been settling into the role of general manager, whilst a relatively inexperienced yet exciting kitchen team are starting to gel. Abilio, commonly referred to as Bill, has vast experience in the industry, previously working at El Bodegón tapas restaurant in Piries Place, Restaurant Tristan in East Street and Limes of Lindfield. He has ambitious plans for The Crabtree. “The pub owners wanted to bring it back to a certain level,” says Abilio. “It was felt that things had dipped just a little bit. Maybe people were too relaxed and certain aspects of the dining experience weren’t being given enough attention. A food-led pub must maintain a consistent standard to stay at the top. When you go out to eat, it’s usually a celebration with friends, family or a partner, be at an anniversary, birthday or a date. So, the experience is important for everyone, so we have to offer consistency.
Michelin Winners Restaurant Tristan in East Street, Horsham, is again the only restaurant in the district to earn a Michelin star. Gravetye Manor near East Grinstead and Sorrel in Dorking also won a star. The Ginger Fox in Woodmancote, The George at Burpham and Horse Guards Inn near Petworth received a Michelin Plate, along with those listed in the main text.
“In recent months, we’ve been improving and taking the pub to the next level. There has been a changing of the guard, as Dean has joined as executive chef. We have stability and consistency and now can look at ways to stand out from other gastropubs around Horsham. “We are not like The Pass at South Lodge, as we are not aiming for a Michelin star. Our aim is to produce good food and good service for every customer, in a pub with a good atmosphere and ambience.”
Keeping it Local Achieving that will partly be the responsibility of the kitchen team, led by Dean Brackenridge. He worked for pub owner Simon Hope whilst still at school, before embarking on a career
change, working for the immigration department at Gatwick Airport. Missing the heat of the kitchen, he joined the team at The Crabtree and has spent the last few months making alterations to the menu. “I have great support in the kitchen,” says Dean. “My head chef is fantastic and we also have a couple of very talented youngsters here. “We source our produce locally whenever possible and bring in fresh, seasonal ingredients every day. As a Sussex pub, we want to promote the best the area can offer. Increasingly, we’re creating daily specials, calling the butcher and fishmonger to find out what they have as we like to prepare new dishes.” Currently, the menu remains fairly modest and traditional. battered fish and chips (served with a surprisingly enjoyable malt vinegar gel) remains a firm favourite, whilst the hay smoked pork loin was beautifully lean and well complemented by a colourful combination of crispy cabbage and heritage carrots. The panfried monkfish with mussels and the roast garlic gnocchi dishes also demonstrate the growing confidence of the chefs.
Pub on the up? Having undergone a difficult period that apparently left some diners underwhelmed, there is an air of optimism at The Crabtree and Abilio is expecting big things for 2019.

“The Crabtree has again been listed in the Michelin Guide and there are some very good pubs that missed out,” he said. “We don't strive to be the best, but we want to be among them. So, I personally would love to target the Gourmand Bib in future. “To do that, we will need to create more of an experience through our menu. That is not something you can do overnight.
That comes through development, training and hard work. But I do believe we have a team in place that is capable. “We are coming up to Christmas, a very busy time for us, so now is not the time to implement big changes.
