Five
top tips for keeping professional kitchens clean and safe:
1. Use daily, weekly and monthly cleaning checklists. High-risk areas such as prep surfaces, handles and sinks should be cleaned multiple times per day.
2. Encourage staff to clean as they go throughout service, making end-of-day cleaning faster and more thorough and preventing build-up and cross-contamination.
3. Colour-code cloths, brushes and mops to avoid cross-contamination with other areas such as washrooms.
