Fried Egg 1 piece Caramelized Onion 45gm Olive oil 5gm Butter 20gm Onion 1kg Thyme 10gm Sugar 15gm Bay leaves 3gm Dark Soy Sauce 15gm Lettuce 10gm Tomato 2 slices Sweet Gherkins 10gm Sliced Cheddar Cheese 30gm French Fries 150gm Paprika Powder 4gm Salt 15gm Black Pepper Fresh Ground2 turns Ketchup 50gm
Preparation Buns For 8 pieces Mix all your ingredients together by hand, make sure not to work it too much as the more you work it the harder the dough gets. Leave to prove for about 45 – 1 hour in a nice and warm place. After that portion your bread into balls of 100gm each. Install on a baking tray and cook in an oven of 180°C for about 10-15 minutes. Caramelized Onion Heat your pan, add olive oil then your butter (oil would prevent your butter from burning), stir in you sliced onion (1cm thick) and turn slowly. After 2 mins add your whole thyme, bay leaves and half the sugar. Put on low fire so as not to burn or having the mix stick to the bottom of your pan. After 20min the onion should have wilted and become translucent in color, taste and add the rest of the sugar, then let it dry for another 10 mins. Add a little bit of the soy sauce just for color be careful not to add a lot as it will become to black in color and have a raw taste. Final Step Grilled the burgers to your liking (For me a burger is always good, tasty & juicy eaten medium). Cut your buns into 2 length wise and grill under the salamander or in a pan at home. Spread your cocktail sauce on the bread (mayonnaise, ketchup & Tabasco) remember there are different versions of cocktail sauce. Same time fry your chips and the egg sunny side up. Mount your bun with the lettuce, slice tomato, gherkins, caramelized onion & beef salami. Topped with your burgers with sliced cheese in-between and on top. Finished off with your fried egg and the top of the bun. Fill the little basket with your chips seasoned with salt, black pepper & paprika. Served with ketchup on the side or any of your favorite dipping. Bon Appétit
