Chicken Tagine Recipes are meant to be shared, thereafter one can tweak according to their palate. A little advice I got from my then 8-year-old niece was “read the recipe carefully” This is one of my favorite recipes. A Moroccan lady was kind enough to show me how to make it. I used thighs and drumsticks, I find they are more flavorful, you can also use lamb, beef, fish, lentils and vegetables. This is a no fuss recipe; the only time-consuming part is peeling the garlic, chopping the onions and the herbs. Did you know that the earthenware pot used to cook this tasty stew is also called tagine? Although I use mine for serving purposes only. Ingredients 6-8 pcs chicken thighs and drumsticks 1 large red onion finely chopped garlic cloves minced 4 1 tsp ground ginger 1 tsp turmeric 50gms green olives pitted 50gms preserved lemon thinly sliced (use the skin part only) 1 small bunch parsley and coriander (chopped) 100 ml Olive oil 100 ml Water Salt and pepper Use a heavy pot with a lid, place half of the chicken pieces, then half of all the ingredients except for the oil, water, salt and pepper. Repeat the process and finally top it off with the oil, water, salt and a good grind of pepper. Cover and place the pot on the hob, let it cook on slow fire for 45 minutes, half way through stir the contents and cover again for another 30 minutes. That’s all there is to it! Serve with steamed rice, naan or couscous.
