The Beautiful South

Do you keep thinking of taking a road trip, but never quite getting around to it? There has never been a better time to go, the National Parks are yours to be explored. If you are short of time, head west on the highway through Morogoro to Mikumi National Park, an easy drive in any type of vehicle. The park can boast of a healthy population of lions, leopards, elephants and some of the fattest warthogs ever seen! After checking in at the Park Gate, head up the hill to Vuma Hills (www.vumahills. com), where a warm welcome awaits you. The tents are large and comfortable, food plentiful and tasty (all diets catered for) and the whole of the park is open and waiting to be explored. Whilst it is easy enough to drive through the park by yourself, it is always a better option to book a game drive at the Camp in one of the specially adapted open vehicles and be guided by the experts. With a trained eye, you will not only see more animals, but have the habitats, life cycles, eating habits and so much more explained to you.

Mufindi Highland Lodge (www.mufindihighlandlodge.com) is nestled in amongst tea fields and farmland and is built on a working farm. The farm still produces vegetables and meats for all of the companies’ lodges. The small lodge therefore has wonderful fresh food and exercise is a great antidote to the irresistible meals. The scenery is quite different from any you will have driven through and makes a wonderful backdrop for walks around the lakes, perhaps bird-watching, or can be enjoyed from horse back (any standard from complete beginner) or from a canoe. Between times, there is badminton, croquet and tennis to fill up your time. That being said, many guests just love to sit and read or potter around the farm! Foxes Community and Wildlife Trust (NGO) is based just 2km from the Highland Lodge and guests are welcome to visit the projects undertaken in the surrounding villages. (www.orphansinthewild.org)

If you have made it this far, then Ruaha National Park is a must see. This is the most beautiful park in Tanzania with a varied topography, rugged river and massive rocky outcrops. Lions abound, as do leopards, hunting dogs, elephants, greater and lesser kudus and over 500 bird species. Settle into a stone and thatch banda at the water’s edge and you are in a ring side seat for watching animals from the comfort of your room courtesy of Ruaha River Lodge (www.ruahariverlodge.com). The Great Ruaha River, is the only permanent water in the park, so the animals will come to you, providing a constant entertainment. Again, game drives are On your return to the camp in the evening, the fire pit will be lit and recommended to be taken in the Lodge’s own open vehicles, but the park is well signposted with well maintained roads, so quite the nocturnal visitors will show up – bush babies, genets, civets possible to drive around in your own vehicle. and occasionally the more elusive honey badgers and porcupines. Whilst 3 or 4 nights are ideal, even a 2 night stay gives you a full day to witness the circle of life evolving around you. If you have the luxury of time, spend a couple of nights in Mikumi, before heading further west past Iringa town to the Southern Highlands. Suddenly the dry savanna landscape morphs into rich greens as montane rainforest merges with emerald green tea fields. At 2000ft the temperature is clement and the air fresher, conducive to outdoor activities.

Prep time: 15 minutes Bake time: 1 hour Serves 8 Ingredients: Crust: Filling: 3/4 Cup All purpose flour 2 lemons 1/4 Cup sugar 6 large eggs 1/2 Cup cold unsalted butter cubed 3/4 Cup sugar 1/4 Teaspoon salt 1/2 Cup unsalted butter 2 Tablespoons cornstarch 1 1/2 Tablespoons lemon zest 1 large egg yolk 1/2 Teaspoon vanilla Optional: Fresh fruits, powdered sugar or whipped cream Instructions: Preheat oven to 180 degrees Celsius Lightly spray the bottom of a nine-inch tart pan with cooking spray. Make sure the pan has a removable bottom as tarts are notoriously finicky and likely to crumble when being dislodged from pans. Combine the flour, sugar, salt, and cornstarch together in a large bowl. (A food processor could also be used for this.) Add the cubed butter and blend until the mixture resembles breadcrumbs. Incorporate egg yolk into the crumb mixture and blend until a ball begins to form. Press the dough into the tart pan making sure to press the dough up the sides of the pan as well. Prick the bottom with a fork six times and place in a freezer to chill 10 minutes. Remove crust from freezer and line the inside of the crust and edge with aluminum foil. Place pie weights or dried beans into the center of crust and bake for 25 minutes. Remove beans and aluminum foil and continue to bake for 15 minutes more or until golden brown. With a juicer or hands juice lemons until 1/2 cup lemon juice is collected remove all seeds. Grate lemon zest. In a medium saucepan over a medium heat, combine lemon juice, sugar, and eggs. Mix well. Cook, stirring continuously for four minutes. Stir in the butter. Continue to cook until the mixture thickens and is smooth about 4 mimutes. Do not boil as it will burn the mixture. Once finished, remove from heat and strain into a bowl. Stir lemon zest and vanilla into filling. Add filling to the pie tart and bake at 180 degrees Celsius for 25 minutes. Allow to cool. Before serving add toppings of your choice. Tarts can be made in advanced and kept for 1 day in the refrigerator.
