Seafood made easy If you’re a lover of seafood, this is an article for you! We often don’t appreciate the obvious fact that living in a coastal region means an abundance of fresh seafood. It’s more of a luxury if you ask us. Besides its availability, seafood is a high protein and low-calorie meal. It’s rich in minerals and vitamins that have proven to be beneficial to your health. Of course, if you’re trying to cut down on your meat intake, seafood is the way to go. And, cooking seafood is not as complicated as some may think it to be. We’re going to give you 2 seafood recipes to get you started on your sea adventure. Pasta and prawns This yummy pasta and prawns recipe will have you feeling all sorts of happy and will have you and your family wanting more and more! The entire meal will take about 30 minutes to complete and the mere fact that it’s homemade will encourage you to make your own little twists in how you want it to taste. Ingredients: • 340g fettuccini pasta • 450g or half a kilo of raw prawns • 1 tablespoon olive oil • 1/2 an onion finely chopped • 2 tablespoons of unsalted butter • 1 minced garlic clove • 1/3 cup of white wine • 2 cups of whipping cream/fresh cream • 1/2 teaspoon of salt • 1/4 teaspoon of black pepper • 1/4 teaspoon of paprika • A bunch of parsley (chopped) • Lemon juice (optional) Directions: • Add the fettuccini pasta in a pot of boiling water, not forgetting a tablespoon of salt and cook until the pasta is al-dente (until the pasta is not too soft). Once it is done, drain the water from the pasta and set it aside. •
In a separate bowl, add the raw prawns, ensuring it has been peeled and cleaned thoroughly. Add the salt, pepper and paprika for the flavoring. If you want to add a little twist into your prawns, squeeze in half a lemon for that zing flavor.

Over medium heat, place a pan and add the olive oil. When the oil gets hot, add in the prawns and cook through for 4 minutes on each side or until cooked enough. Once done, place your cooked prawns onto a plate to add later into the finished dish.

In the same pan used for the prawns, add the butter and chopped onions and stir until nicely golden brown before adding the garlic. Once these are incorporated and their aroma comes through, pour in the white wine and leave to boil for about 5 minutes.

As you stir, add in the whipping cream or fresh cream into your mixture and let it simmer for about 2 minutes until it is nice and creamy. Once done, add a pinch of salt, black pepper and paprika for flavoring and switch off the stove.

Into your sauce, add your drained pasta, cooked prawns and toss it until they are both incorporated into your creamy sauce and top it off with the chopped parsley for garnish. Last but not least, serve it into a bowl and enjoy your delicious homemade creamy prawn pasta!
If you’re feeling adventurous, you can try the same recipe with a tomato sauce instead of the fresh cream sauce. The important thing is to have fun with it! Page 16

Grilled Garlic Butter Calamari Yes, it has quite a long name but believe us, once you try this, all you’re going to be thinking about is why you haven’t done this before. Of course, if you’re not a fan of calamari, you can substitute it for the type of fish you prefer. The butter in the calamari will make it juicy and irresistible. This recipe will have you obsessed with fish and each bite is even better than the one before. Ingredients: • 115g unsalted butter • 3 cloves of garlic (smashed) • 1/2 cup of lemon juice • Fresh dill (chopped) • 1/2 teaspoon of salt • 1/4 teaspoon of black pepper • 300 gms Calamari (or any fish of your choice) Directions: • In a pan, melt the unsalted butter and add the salt, pepper, smashed garlic cloves and let it simmer for less than a minute. Add in the freshly chopped dill and lemon juice into the mixture and switch off the stove immediately after. • Add half (1/2) of the lemon garlic butter mixture onto the calamari (or fish of your choice) and let it marinate as you preheat the grill. •
Once the grill is preheated to about 160c (medium-high), brush on some oil onto the grates and place your calamari (or fish of your choice) and cover the grill for about 3 minutes.

Flip over your calamari and brush the lemon garlic butter mixture on the top side and cover the grill for a further 3 - 5 minutes.

Once it is grilled to your liking, transfer onto a platter and drizzle the remainder of the mixture. If the mixture has hardened over time, heat it on the stove for a couple of minutes to melt it again.
This recipe is super easy and can be enjoyed with a side of creamy mashed potatoes, fries, white rice or even just vegetables if you’re going for a light, healthy meal. If you don’t have a grill, no problem. You can make this dish with your everyday kitchen pan just to your liking!
