Rice Around the World Have you ever thought of a more versatile food other than potatoes? I mean fried,
baked, mashed, we can go on and on. There’s just so many ways it can be prepared and eaten. Question is, are potatoes really the only ones you can be extra creative with? The answer to that is simply, Rice. Rice is one of the easiest staple foods to prepare, store and use in your kitchen. It’s usually a side meal or a part of a bigger dish. Why not make it the main dish? Don’t know how? No problem. This article will show you the different ways rice can be the star of the show and not just the ‘extra’ from looking at how it is cooked around the world. East Africa: Pilau Pilau is a famous Swahili meal that dates back to its Indian origin. It was adapted by East Africans and has been extremely part of the coastal region culture. Pilau is very easy to make and can be made with beef, lamb, mutton, chicken and vegetables. Ingredients: • 2 cups of rice • Half a kilo of beef/chicken or any type of meat • 3 cups of beef/chicken/vegetable stock • A quarter (1/4) cup of vegetable oil • 1 large onion – finely sliced • 4 garlic cloves – mashed • 2 teaspoons of pilau masala • 1 teaspoon of cardamom powder/4 pieces whole cardamom • 1 teaspoon of ginger • Salt
Steps: • Boil the beef/chicken in hot water, adding 1 teaspoon of ginger, 1 tsp garlic and juice of half a lemon for flavor. When the beef/chicken is nice and tender, drain it, saving the stock for later. • In a separate cooking pot, heat the vegetable oil, add the onions, stirring them as they brown. Once the onions start to turn slightly translucent, add the pilau masala spice and stir in a medium to low heat to avoid the spices burning and getting bitter. • As soon as the onions turn golden brown, add the beef/chicken and stir to coat the meat with the spice infused oil. Add salt and cover the pot to allow all the flavors to be incorporated. • Wash the rice as the meat is cooking and make sure you turn it every now and then to avoid sticking to the bottom of the pot. Do this until the meat turns golden brown. Once that happens, add the mashed garlic and let it cook with the meat for a couple of seconds before adding the previously washed rice. • Once the rice is added, mix it all together to ensure all the components are coated together, later adding the beef stock and finally covering the cooking pot. • Your pilau will be done once the rice has completely absorbed all the water in the cooking pot. Don’t forget to turn your pilau from time to time until it is ready. • If doing a vegetarian one, fry the onions and garlic until aromatic, add the carrots, potatoes and peas, then finally the washed rice, the spices and the vegetable stock. Cover and let cook on slow fire for 20/30 minutes Serve with Kachumbari West Africa: Jollof rice Jollof is one of the most popular rice dishes from West Africa, specifically Ghana and Nigeria. Because of the ingredients, this rice has a unique spicy flavor and a great color to it. If you’re a fan of West African cuisine, this one’s for you. Ingredients: • • • • • • • • • • • •
2 large yellow onions (chopped) 1/3 cup vegetable oil 2 cans chopped tomatoes 170g tomato paste 1 habanero pepper 2 teaspoons of curry powder 1 teaspoon garlic powder 1 teaspoon ground ginger 1/2 teaspoon of dried herbs 3 chicken bouillon cubes 2 and a half long grain rice 1 and a half cup of water
Steps: • Add the chopped onions and 2 tablespoons of oil into a blender and crush together until a puree is formed then pour into a bowl. In the same blender, add the tomatoes, tomato paste and habanero pepper, blend till smooth and transfer onto a separate bowl. • In a cooking pot, pour in the remaining oil and heat till ready for frying. Add the onion puree until the water from the puree has dried out and the onion puree starts to brown. Once this is done, add in the tomato puree, garlic powder, ginger, dried herbs and chicken bouillon cubes. • Leave to cook as you stir these ingredients regularly until the sauce has a deep red color and has reduced by at least half. This should take about 20 minutes over medium heat. • Lastly, add the rinsed rice, water and leave to boil over a medium to low heat covering your pot with a foil and lid. Let this simmer for further 30 minutes or until the rice has cooked through and all the liquid has been absorbed.
Tip: add a few drops of good quality Coconut Oil to your Mbeya rice and cook on slow fire for 20 minutes. Page 16

China: Fried rice Good news! You don’t need to go to China to eat traditional fried rice. You can simply head on over to your favorite Chinese restaurant and order it! If you want to try this at home, that’s pretty easy too. What you probably never thought about was the fact that it is actually a meal you can make at home when you just don’t feel like using a lot of time cooking. The second-best thing about fried rice is that you can use leftover rice. That’s right, rice that you had the previous day. Ingredients: • • • • • • •
Freshly cooked/leftover rice (long grain) 1 chopped white onion Vegetables – carrots, peas, broccoli (the options are endless) 2 Eggs (beaten) Sesame oil/vegetable oil 3 tablespoons Soy sauce Green onions (optional for garnish)
Steps: • In a pan, over medium heat, pour sesame/vegetable oil until it is well heated, add the chopped onion and vegetables, stirring till they are tender and soft. • Set them aside then add the beaten eggs onto the pan, cooking them as scrambled eggs. Once this is done, return the cooked veggies into the pan with eggs and combine the two together. • Over medium heat, add the cooked rice into your mixture and mix together until they are all fused, later pouring the soy sauce and mixing them all together. • You can choose to add the green onions as garnish and that is literally it. You have yourself a complete meal. Italy: Risotto Risotto is a traditional Italian meal cooked with special rice called Arborio. Although a simple dish from the look of it, risotto is a delicate dish that would require to be made with the perfect consistency to be best enjoyed. No worries though, we’ve got you covered with this simple recipe. Ingredients: • 4 cups of chicken stock • 1 tablespoon of vegetable oil • 3 tablespoons of butter • 1 medium shallot/ 1/2 onion (chopped) • 1 and a half cup of Arborio rice • 1/2 cup dry white wine • 1/4 cup parmesan cheese (grated) • 1 tablespoon of chopped parsley • Salt to taste Steps: • Heat up a pan on medium- low to simmer the chicken stock. While in a separate saucepan, heat 1 tablespoon of oil and butter over medium heat. As the butter melts, add the chopped onion/shallot and sauté for about 3 minutes. • Add the rice into the pan and stir to ensure it is coated with the melted butter and oil. Without letting the rice turn brown, sauté it for about a minute more. • As you continue to stir, add the white wine until it is well absorbed into the rice. • Once the wine is absorbed, add a ladle of the previously heated chicken stock (make sure it is hot) and stir the rice until the liquid is absorbed. Once it is almost dry, add another ladle of chicken stock and repeat this process until the rice is firm yet tender enough to bite through. • Before it is fully cooked, add the remaining butter, Parmesan, parsley and salt and let simmer for about 2 minutes. Voila, your risotto is ready! Bonus: Vitumbua If you’ve never heard of vitumbua, they are basically a Tanzanian version of a doughnut (without the hole in the middle), made out of coconut milk and rice. They’re a little more complicated to make compared to the previous rice recipes mentioned above but they are the best and you know what they say… we save the best for last! These practically melt in your mouth and are truly irresistible. Ingredients: • 1 and ¾ cup of coconut milk or tui (in Kiswahili) • 1 and a half cup of rice • 1 cup sugar • 1 tablespoon of instant yeast • 1 tablespoon cardamom powder Steps: • For a soft kitumbua, soak the rice overnight to ensure it will be properly mashed and drain the water before cooking. Drain the water for as long as possible to ensure no water is left in the rice. • In a blender, add the soaked rice, coconut milk, yeast and cardamom powder and blend until completely smooth. This may take some time so give the blender a few breaks in between. • Once your mixture has mashed completely into a smooth batter, pour into a bowl and cover it with a kitchen cloth to allow it to rise for 30 to 60 minutes. • Once it has risen, add the sugar and mix it by hand. Make sure you wash your hands before you dip it into the mixture though. Once the sugar is well mixed, the batter will become lighter and runny compared to before. • For a perfect shape, place an Appam pan over medium heat, ensuring the slots are filled with oil for frying your vitumbua. In each, add a spoon full or two of batter and turn once the bubbles form. You will know your vitumbua are ready once they rise into a round shape and are golden brown.
