4 thin slices of red bell pepper 4 thin slices of zucchini 2 sliced mushrooms 2 tablespoons tomatoes, diced 2 eggs Parsley, chopped to taste Salt and black pepper to taste

Directions 1. Place vegetables in the Microwave Breakfast Maker, cover and microwave at 80% power 2–3 minutes. 2. In small bowl, whisk together eggs, parsley, salt, and pepper, pour over vegetables. 3. Cover and microwave at 80% power 2–3 minutes, or until eggs are cooked through.
