Recipe of the Month-Beef & Sweetcorn Kofta. Serves 4 (makes 24) Free and ready in 40 minutes

Ingredients Small pack fresh coriander, leaves and stalks roughly chopped 500g lean beef mince (5% fat or less) 2 tbsp tikka curry powder (or to taste) 2 carrots, peeled and coarsely grated 198g can sweetcorn with peppers, drained and dried
Method Preheat the oven to 200C/fan180C/Gas6 Put most of the coriander in a large bowl reserving a few chopped leaves. Add the beef, curry powder, carrots, sweetcorn and a little seasoning. Mix well and divide the mixture into 24 equal-sized balls. Arrange the koftas on a baking tray, spaced well apart. Spray with low-calorie cooking spray and bake for 25-30 mins Scatter with the remaining coriander to serve. These tempting koftas are fantastic with a little mango chutney.
