Known as the Tipsy Blokes, Schell coworkers and natural pranksters Adam Pettengell and Frank Ryan are similar guys from different backgrounds who are using their verbal jousting skills to the fullest in Beachfront Banter. Hailing from across the pond, Adam’s British humor is the perfect foil for Frank’s American East Coast wit. Sometimes chaotic and always adventurous, their podcast is solid banter with a healthy dose of random-yet-interesting information and non-stop laughs.

Exploring Delaware’s coastal towns and accompanying culture, Beachfront Banter ventures into the realm of local characters, must-see hotspots, notable nonprofits, and behind-the-scenes secrets. Each episode offers a full pint of original insights served up with the signature Schell vibe. While the episodes offer something for everyone, Adam explained that their repartee may have special appeal for new home buyers. “It’s a great way to get acquainted with the builder and the community,” he said. “We’re like family at Schell and the podcast features straight talk—along with occasional curve balls—about the company and life at the beach. Hopefully, we’re offering some help along the way, even if it’s just a local food tip.”

When asked how the podcast got its start, Frank explained that it came about organically. “I thought it would be fun to give podcasting a try and had only one guy in mind to co-host. I called Adam and of course he said ‘yes’ because this fits right into our everyday shenanigans.” After acknowledging— tongue-in-cheek—that Frank would say all ideas were his, Adam elaborated, saying, “It’s great to work for a company that allows us to act on our ideas, while investing the time and money to bring the concept to life.” As

community sales managers who collectively have welcomed hundreds of customers into a variety of Schell neighborhoods, the two have been part of the company’s unique culture and pay-it-forward mission for many years.

When we asked the blokes what it takes to host a podcast for the region’s top homebuilder and 2023 Pro Builder of the Year, Frank was quick to respond. “We try not to take things too seriously; we just naturally inject fun into our regular routine,” he said. “If you can’t laugh while doing whatever it is that you do, then don’t do it. Life’s too short.” Adam added, “Nothing is off the table, from practical jokes to the inside scoop about homebuilding. And who doesn’t like to listen to a chap with an English accent?“

With a few episodes under their proverbial belts, there have been some surprises along the way. “This was a little harder than we initially expected,” Frank admitted. “Despite thinking we were already so naturally witty and interesting, we quickly learned that a little prep work goes a long way. Keeping on task for some ... like maybe, Adam ... can be a challenge, so we always check ourselves a bit.” Adam dodged the jab, adding, “It certainly has

been a learning experience. We’re still novices at the craft and would be nothing without James, Parker, Ivana, and Caitlin, who produce and edit all the episodes.”

With a variety of future episodes on the drawing board, we were curious about upcoming topics. “We’re looking forward to talking with more local legends, restaurant owners, and charity leaders,” Frank said. “And, of course, scoring an interview with the big man Chris Schell himself.” Without disclosing details, Adam suggested that they have a plethora of unique ideas up their sleeves.

As the Tipsy Blokes prepare for upcoming episodes, Adam reflected, “We have a lot to be thankful for. From my perspective, the podcasts are an opportunity to have a drink with my best buddy while talking about what we love best about our company and the beaches. Frank added, “We have a lot of fun doing what we do and where we do it. So sharing the company, culture, and local area was a no-brainer for us.”

STEPPING INTO

It has been said that good things come to those who wait. After admiring the River Mill community over time, Jasmine and Kevin Wiggins ultimately bought the last home available and built the lifestyle of their dreams. So how did this fun-loving family of four celebrate the moment? By showing up for move-in day in Jordan 1 ‘Shattered Backboards,’ of course.

Their story started with a chance meeting at a college event in 2015, when Kevin was a student at Virginia State, while Jasmine was pursuing studies at Christopher Newport University. He hailed from Newport News; she was a Richmond native. After marrying four years later, the couple settled into the Richmond area where Kevin now works as a cost price analyst and Jasmine is a content creator in the financial field.

As time went by, Jasmine noticed a new home community taking shape along the

banks of the scenic Chickahominy River. “I liked the community from the start,” Jasmine said. “When I drove into River Mill, it just felt like home. I saw families walking and kids playing. I knew I wanted my future family to experience that when the time came.”

Fast forward a few years, and the couple’s interest in River Mill moved from casually impressed to truly interested. Amenities such as a swimming pool and play area were a big draw for the growing family that now includes four-year-old Kinsley, and Jrue, who will soon

turn 1. “When we were ready to make a move, there was one home available,” Jasmine said. “As fate had it, we felt like it was meant for us.” The timing turned out to be perfect, as the couple secured the home just before selections were finalized, enabling them to personalize the interior space according to

their preferences.

“We knew we wanted a bright feeling in our home, similar to a Schell model we had visited,” Jasmine explained. “At the design studio, Kathryn helped us achieve the right atmosphere with light floors, a light backsplash, and coordinating accents. As minimalists with kids, we wanted a house that was both modern and functional.”

In addition to discussing the design process, Kevin highlighted the benefits of Schell’s

construction systems, energy-efficient features, and team approach. “From day one Schell Brothers has been over-the-top excellent,” he said. “Zach, Kathryn, Abe, and the rest of the Schell team addressed every detail and made us feel like family.”

Now that they’ve settled into their new Lilac home, Jasmine and Kevin agree that the family room is their favorite. “The windows are massive; they bring in good energy and natural light.” Jasmine said. Kevin added, “It’s also the perfect place for family game nights or watching football on a fall weekend.”

As a busy household with varied interests,

Kinsley is into dance and Jrue loves to swim. With so many amenities available in the community, much of the family’s time has centered on pursuing on-site activities and exploring their surroundings. “Walking our dog, Hendrix, has been a great way to meet neighbors,” Kevin said. “And our kids love the playground,” Jasmine remarked. “We’ve been there almost every day since we moved in.”

When they venture out, Jasmine and Kevin enjoy the Short Pump area, while they cited Vinny’s as their favorite local gathering spot. “We usually eat out once a week with the kids,” Jasmine said. “In addition to Vinny’s,

we also frequent the Cheesecake Factory or Burgerworks in the Innsbrook area.” Kevin added that ice cream at Cold Stone is a popular family treat on Sunday evenings.

No matter where you find this charismatic family, there is a good chance that each of the four will be sporting a pair of their favorite sneakers. “We have a crazy sneaker

collection,” Jasmine revealed. “There was a dedicated shoe closet in our previous home, and we brought that with us to River Mill.” Daughter Kinsley especially loves sneakers and has partnered with the Jordan Brand. “I’d have to say that the ‘Jordan 1 Silhouette’ is our go-to shoe,” Jasmine explained. “We all love it.” With a smile, Kevin said, “I’ve got some other good options in my rotation, too.”

As the newest residents of River Mill,

the family enjoys meeting neighbors and taking part in all the community has to offer. “We like to get outdoors as a family, so it’s nice to live in a true neighborhood with sidewalks, walking trails, and even a river park,” Kevin said. No doubt, this family of four is ready to lace up their sneakers and enjoy every step.

The Feast of the Seven Fishes

GIFTS FROM THE SEA

Grounded in Italian-American tradition, the Feast of the Seven Fishes is a lovely way to incorporate ingenuity, camaraderie, and dramatic elegance into your seasonal gathering. Whether formal or casual, this Christmas Eve meal rooted in the seven sacraments is a cherished custom that encourages togetherness and culinary creativity.

To inspire your delicious dining experience, we asked Chef Lion Gardner of Drift Rehoboth to share his favorite recipes from the sea. You may choose to prepare seven distinct seafood dishes—as we’ve showcased here—or present one gem from the sea using a variety of techniques. Either way, your festive gathering is sure to be the perfect mix of fun and flavors.

DRESSED OYSTERS

Yield: 4 servings (3 oysters each) with gremolata

Ingredients:

12 fresh, live oysters, cleaned

1 teaspoon crushed red pepper flakes

¼ cup parsley, chopped

1 shallot, minced

¼ cup seasoned croutons, crushed into crumbs (see Chef's Note)

2 tablespoons extra virgin olive oil

Lemon juice to taste

Sea salt to taste

2 tablespoons garlic chips (see Chef's Note)

Preparation:

Shuck oysters and keep the half shells cold until ready to use.

In a small mixing bowl, stir together the pepper flakes, parsley, shallot, crouton crumbs, olive oil, lemon juice, and salt.

Assembly:

Top each oyster with a teaspoon or so of the gremolata mixture and a few garlic chips. Serve on a cold plate or atop a bed of crushed ice.

CALAMARI SALAD

Yield: 4 servings with Calabrian chilis

Ingredients:

1 pound fresh squid tubes, cleaned

3 ounces Calabrian chilis, chopped

6 ounces arugula, watercress, or pea tendrils

1 shallot, thinly sliced

¼ cup seasoned croutons (see Chef's Note)

¼ cup garlic oil

Lemon juice to taste

Sea salt to taste

Extra virgin olive oil to taste

Handful of fresh Italian parsley leaves

1 lemon, zested

Preparation:

Bring a large pot of salted water to a boil and blanch the squid tubes for about 3 minutes. Scoop the squid from the water and transfer it to an ice bath to chill for about 2 more minutes; then remove and pat dry. Cut the blanched squid into large pieces and set aside.

Assembly:

In a large mixing bowl, toss the calamari with the chilis, greens, shallot, croutons, garlic oil, and a splash of lemon juice. Season gently with salt. Transfer the calamari salad to a serving platter or to individual plates.

Drizzle with extra virgin olive oil, top with fresh parsley and lemon zest, then serve immediately.

MUSSELS & CLAMS PASTA

Yield: 4 servings with garlic, lemon, and white wine

Ingredients:

½ pound dry linguini, spaghetti, or other pasta

¼ cup garlic oil (see Chef's Note)

6 garlic cloves, minced

12 fresh clams in the shell (littleneck or middleneck), rinsed

1 teaspoon crushed red pepper flakes

1 cup dry white wine

¼ cup chicken, seafood, or vegetable stock (plus more as needed)

18 fresh mussels in the shell, rinsed and beards removed

1 cup blistered tomatoes (see Chef's Note)

1 tablespoon plus 1 teaspoon unsalted butter

1 tablespoon Italian parsley, chopped

Sea salt to taste

2 tablespoons lemon juice

Extra virgin olive oil to taste

Handful of garlic chips (see Chef's Note)

Preparation:

Cook the pasta according to the manufacturer’s instructions. In a large skillet with a lid, heat the garlic oil over mediumhigh heat with the lid off and add the garlic. Sauté until garlic is fragrant and just beginning to brown. Add the rinsed clams to the skillet along with the crushed red pepper. Deglaze the pan with white wine, add the stock, and reduce by about one-half. Top with the lid and allow to cook for about 3 to 4 minutes, covered.

Remove the lid, add the mussels and tomatoes; then replace the cover and cook for an additional 4 to 5 minutes or until all the mussels and clams have opened on their own. Remove them from the pan and set aside. Discard any mussels or clams that do not open during cooking.

The volume in the pan should have increased as a result of the shellfish liquid released by the mussels and clams while they cooked. If the pan is dry or the level of liquid is too low, add a bit of additional stock. Bring the liquid in the pan to a boil and reduce slightly. Remove from heat, stir in the butter and parsley, and season to taste with salt.

Assembly:

Toss the cooked pasta together with the pan sauce and transfer to individual plates or to a serving platter. Arrange the cooked mussels and clams on top of the pasta, finish with a drizzle of fresh lemon juice, extra virgin olive oil, garlic chips, and additional herbs if desired. Serve immediately with warm bread and provide an empty bowl for the shells.

BAKED COD

Yield: 4 servings with crispy potatoes, blistered tomatoes, and olives

Ingredients:

½ pound yellow potatoes, cut into chunks

4 (5-6 ounce) portions of cod or other delicate white fish

4 teaspoons unsalted butter, divided

1 lemon, juiced

Sea salt to taste

½ cup garlic oil

1 cup blistered tomatoes (see Chef's Note)

1 cup whole, pitted olives

Handful of parsley

Extra virgin olive oil to taste

Handful of garlic chips (see Chef's Note)

Preparation:

Preheat oven to 400⁰ F.

Bring a large pot filled about two-thirds with water to a boil and add the potato chunks. Reduce to a simmer and cook for about 6 to 8 minutes, until chunks are just tender. Drain and spread potato chunks on a baking sheet to dry and cool.

Arrange cod fillets on a separate baking sheet and top each with a teaspoon of butter and a squeeze of fresh lemon. Gently season with salt.

In a large skillet, using garlic oil, add the potato chunks in batches and pan fry until crispy on all sides. Then, transfer them back to the original baking sheet.

Place the fish in the pre-heated oven and bake for 8 to 10 minutes.

Assembly:

In a large mixing bowl, add the olives, crispy potatoes, blistered tomatoes, parsley, a splash of fresh lemon, and a few teaspoons of the garlic oil used to cook the potatoes. Season gently with salt, toss together, and transfer to a large serving plate.

Remove fish from the oven and use a thin but firm spatula to transfer each portion to the serving dish, arranging it on top of the potato and olive mixture. With a spoon, drizzle the liquid that accumulated on the baking sheet from the fish overtop along with a bit of extra virgin olive oil. Add garlic chips and serve immediately.

CRISPY FRIED SMELT

Yield: 4 servings with garlic aioli, lemon, and herbs

Fried Smelt Ingredients:

3 cups vegetable oil, for frying

1 cup all-purpose flour

½ teaspoon white pepper

½ teaspoon salt

1 pound smelt or other small whole fish such as sardines

Garlic Aioli Ingredients:

2 egg yolks

1 tablespoon Dijon mustard

3 garlic cloves

2/3 cup vegetable oil

1 tablespoon vinegar

1 tablespoon lemon juice

Sea salt to taste

Lemon wedges and fresh herbs for plating

Fried Smelt Preparation:

In a heavy-bottom pot with tall sides, heat the vegetable oil to 350⁰ F, using a thermometer for accuracy.

In a bowl, season the flour with white pepper and salt. Gently toss the smelt in the seasoned flour to coat on all sides. Fry in batches in the oil until crispy, about 5 minutes. Transfer the fried fish from the pot to a paper towel-lined plate or baking sheet.

Garlic Aioli Preparation:

In a blender or food processor, add the egg yolks, mustard, and garlic and start the motor. Add the oil in a thin stream as the motor runs. The emulsification will form immediately.

Continue to add the oil until the mixture is thickened to the consistency of mayonnaise and the color is off-white. Then, with the motor still running, add the vinegar, which will thin the mixture somewhat. Adjust the flavor and texture with the lemon juice and salt.

Transfer aioli to a container with a lid and refrigerate until ready to use. Will keep for 5 days covered in the refrigerator.

Assembly:

Position the hot smelt on a serving plate alongside a ramekin of the garlic aioli and some lemon wedges. Garnish with fresh herbs as desired and serve immediately.

WHOLE ROASTED STUFFED BRANZINO

Yield: 4 servings with fennel and blistered tomatoes in saffron cream

Stuffed Fish Ingredients:

1 cup blistered tomatoes (see Chef's Note)

1 tablespoon plus 2 teaspoons unsalted butter, divided

1 bulb fennel, thinly sliced

1 bunch kale, chopped

½ cup pickled sweet and/or hot red peppers, chopped

1 bunch fresh herbs (parsley, chervil, or oregano), divided

¼ cup dry white wine

1 (2 pound) whole branzino, scaled, gutted, and bones removed

1 lemon, juiced

Salt to taste

Extra-virgin olive oil to taste

Saffron Cream Ingredients:

1 shallot, minced

1 garlic clove, minced

Pinch of saffron threads

¼ teaspoon paprika

1 tablespoon olive oil

1 tablespoon white wine

¾ cup heavy cream

¼ cup seafood, vegetable, or chicken stock

Salt to taste

Stuffed Fish Preparation:

In a large sauté pan over medium heat, melt 1 tablespoon of butter and add the sliced fennel. Cook until soft and translucent. Add the kale, peppers, and about half of the fresh herbs. Add the wine and cook for several minutes to allow it to evaporate; then remove from the heat and set aside to cool.

Pre-heat oven to 400⁰ F while the stuffing mixture is cooling.

Lay the fish on a clean work surface and fold back the fillets so the fish is open like a book. Lightly season the fish fillets with salt and a few drops of the fresh lemon juice. Add the stuffing mix along with 2 teaspoons of butter to the fish fillets. Then, bring the fillets together as if you are closing a book, taking care not to overfill the fish.

Gently brush the outside of the fish on both sides with olive oil, season lightly with salt, and place on a baking sheet.

Bake for about 12 minutes; then use a firm but thin spatula to gently flip the fish over. Bake for an additional 10 to 12 minutes or until the fish is cooked through.

Saffron Cream Preparation:

In a large sauté pan over medium heat, gently cook the shallot, garlic, saffron, and paprika in the olive oil for about 4 minutes. Add the wine and continue to cook until almost evaporated.

Add the cream and half of the stock. Bring to a boil and reduce by about half. Add salt to taste and adjust the consistency of the sauce, using the remaining stock if necessary.

Assembly:

Select a plate large enough to accommodate the whole fish. Pour a thin layer of warm saffron cream onto the plate before gently transferring the whole roasted fish from the baking sheet to the plate. Add the blistered tomatoes, some of the remaining fresh herbs, and a splash of the fresh lemon juice, along with a drizzle of extra-virgin olive oil. Serve immediately.

TINNED FISH

"Through the years, I have grown to love eating and serving tinned fish. These simple canned treasures have gained in popularity, mainly for their combination of quality, convenience, and culinary heritage. Delicacies— such as Spanish mackerel in tomato, Portuguese sardines with lemon and garlic, or Italian albacore tuna in spicy olive oil—offer bold, interesting flavors that are available without any preparation. This makes them an easy addition to your seven fish lineup, pairing perfectly with whatever you have in the cupboard, from crusty bread to pickled vegetables and everything in between."

CHEF'S NOTE

To help you pull off a classic Feast of the Seven Fishes meal, a few essentials will appear in most dishes, including garlic, lemon (juice and zest), fresh herbs (parsley, chervil, or oregano), and, of course, olive oil. We prefer to use two kinds: regular olive oil for cooking as it can withstand high temperatures, and extra virgin olive oil for drizzling on the dishes just before serving.

Yield: About 3-4 cups

Ingredients:

2 pounds cherry tomatoes

1 tablespoon olive oil

Preparation:

Pre-heat oven to broil and set the oven rack on the second-highest position.

Arrange the tomatoes on a baking sheet and drizzle with oil. Place them under the broiler until the skin begins to darken and blister, about 4 minutes. Remove from the oven and set aside to cool.

The blistered tomatoes may be stored in a covered container in the refrigerator for up to 5 days.

Yield: About 2 cups

Ingredients:

1 loaf day-old Italian bread (substitute baguette or focaccia)

1 tablespoon olive oil or garlic oil

½ teaspoon garlic powder

½ teaspoon paprika

½ teaspoon dried oregano Sea salt to taste

Preparation:

Pre-heat oven to 350⁰ F.

Remove most of the crust and cut the bread into ½-inch cubes. In a mixing bowl, toss the cubed bread together with the oil and seasonings until uniformly coated.

Arrange the cubes on a baking sheet and cook until golden brown and crunchy, about 6 to 8 minutes.

Remove from the oven and set aside to cool. The croutons may be stored at room temperature for about 3 days.

GARLIC CHIPS & GARLIC OIL

Yield: About ½ cup crispy garlic chips and ¾ cup garlic oil

Ingredients:

1 cup olive oil

12 garlic cloves, peeled and thinly sliced

Preparation:

In a small pot, heat the olive oil over medium heat until it begins to shimmer. Add the garlic slices in batches to avoid overcrowding and fry until golden brown and crispy.

Scoop the fried garlic from the oil with a slotted spoon and transfer to a paper towellined plate until ready to use. Remove oil from the heat and set aside for later use.

Garlic chips may be stored at room temperature for a few days, while the garlic oil may be stored in a jar with a tightly fitted lid in the refrigerator for up to 2 weeks.

According to The Christmas Song, a turkey and some mistletoe help to make the season bright—but we all know it’s the cookies that make this time of year delicious.

Premiering in 2024 with 48 flavorful entries, our Schellville Christmas Cookie Bake-Off was a sweet way to share favorite recipes while raising funds—and cookie donations—for Jusst Sooup Ministry. To inspire your seasonal baking, we’re featuring the top holiday confections chosen by last year’s celebrity panel of judges.

In discerning style, every entry was carefully sampled by Dru Tevis, a Food Network holiday baking champ, as well as Delaware Restaurant Foundation V.P. Meg Gardner, Ryan and Nicole Stevenson of Shore Smoke Seasonings, and Frankie Whitaker of Frankie's Pop Shop. Reflecting on the spirit of the event, Tevis remarked, “Enjoying dessert reminds us of our favorite childhood memories, and Christmas cookies capture all the magic that saving room for dessert should always be about.”

Triple Chocolate Cookies

Yield: 22 Cookies

INGREDIENTS

Cookies:

½ cup butter, softened to room temperature

1 tablespoon vegetable oil

½ cup granulated sugar

½ cup light brown sugar, packed

1 large egg, at room temperature

1 teaspoon vanilla extract

1¼ cups all-purpose flour

½ cup unsweetened cocoa powder

1 teaspoon baking soda teaspoon salt

¼ cup mini semi-sweet chocolate chips

Chocolate Frosting:

¾ cup butter, softened to room temperature

2 cups powdered sugar

6 tablespoons unsweetened cocoa powder

3 tablespoons heavy cream or milk, slightly warm

1 teaspoon vanilla extract

Pinch of salt

Decorating:

Red and green buttercream frosting

Sno-Caps candy

INSTRUCTIONS

Cookies:

In a large bowl using a handheld or stand mixer, beat the butter, oil, granulated sugar, and brown sugar together on medium-high setting until fluffy and light in color, about 2–3 minutes. Add the egg and vanilla extract, and beat on high until combined. Scrape down the sides and bottom of the bowl as needed.

In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt until combined. With the mixer set to low, slowly pour the dry ingredients into the wet ingredients. Beat on low until combined; then stir in the mini chocolate chips. The cookie dough will be thick and sticky. Cover dough and chill in the refrigerator for at least 2 hours or up to 3 days.

Preheat the oven to 350°F. Line baking sheets with parchment paper.

Remove cookie dough from the refrigerator. If dough was chilled longer than 3 hours, let it sit at room temperature for about 20 minutes to make the dough easier to scoop and roll. Scoop about 1 tablespoon of dough and roll into balls. Arrange balls 2-3 inches apart on the baking sheets.

Bake cookies for about 10 minutes or until the edges appear set. To achieve a nice round cookie, swirl them inside a 3-inch cookie cutter immediately after removing from the oven. Cool cookies for 10 minutes on the baking sheet; then transfer cookies to a rack to cool completely.

Frosting:

With a handheld or stand mixer fitted with a paddle attachment, beat the butter on medium until creamy, about 2 minutes. Add powdered sugar, cocoa powder, heavy cream/milk, vanilla extract, and salt. Beat on low for 30 seconds, then increase to high and beat for 1 full minute.

Decorating:

Put a Wilton 8B tip in a piping bag, fill with the frosting, and pipe one large dollop in the center of each cookie. Place a Sno-Caps candy in the center of each dollop. If desired, pipe red and green accents for a festive holiday flair.

Cover and store frosted cookies at room temperature for up to 1 day, or refrigerate for up to 5 days. These cookies also freeze well.

"Berry Christmas!" Sugar Cookies

Yield: 24 Cookies

INGREDIENTS INSTRUCTIONS

Strawberry Shortcake Crumbs:

10 Golden Oreo cookies

¼ cup butter

1½ ounces Strawberry Jell-O mix

Dough:

1¼ cup sugar

1 cup butter, softened

1 large egg

1 tablespoon vanilla extract

¼ cup sour cream (or plain Greek yogurt)

½ teaspoon salt

4 cups all-purpose flour

Royal Icing: cup meringue powder

½ cup warm water (adjust amount as needed)

2 teaspoons vanilla extract

2 pounds powdered sugar

1 tablespoon corn syrup

1 tablespoon vegetable glycerin

Cookies:

Preheat oven to 350°F.

Prepare strawberry shortcake crumbs by placing Oreo cookies into a plastic bag and crushing them to small bits. In a small bowl, melt butter and stir in the Jell-O mix. Then, pour the mixture into the bag of Oreo crumbs and shake until coated. Freeze the bag while you work on the dough.

To make the dough, cream sugar and butter together in a stand mixer until just mixed. Add in egg, vanilla extract, and sour cream.

Add the salt and flour gradually until the dough pulls away from the bowl. You may need a bit of extra flour to achieve the proper consistency.

Add the frozen strawberry shortcake crumbs to the bowl, mixing lightly to create a swirl pattern. Overmixing will result in a less-defined pattern.

Roll out the dough between sheets of parchment paper and freeze for 10 minutes; then cut your shapes. Bake 12 minutes for average-size cookies, adjusting up or down by 2 minutes for smaller or larger sizes. Let cookies cool completely before icing.

Icing:

In a stand mixer, whisk meringue powder, water, and vanilla extract. Add powdered sugar, corn syrup and vegetable glycerin and mix for 3 minutes. The icing will be thick. To achieve a thinner icing, add small amounts of water until desired consistency is achieved. To apply icing, it may be spread on cookies, dipped, or placed in a piping bag. Decorate cookies and enjoy!

Merry Christmas Bars

Yield: 15 Bars

INGREDIENTS INSTRUCTIONS

2 cups all-purpose flour

½ cup granulated sugar

¼ teaspoon salt

1 cup butter, cold

¾ cup seedless raspberry jam

½ cup cherry preserves

1 tablespoon dried cranberries or cherries

1 teaspoon cinnamon

1 teaspoon pumpkin pie spice mix

½ to 1 teaspoon ground cloves

¼ cup almonds, sliced cup shredded sweetened coconut

½ cup white chocolate chips, melted (or small amount of powdered sugar for dusting)

Preheat oven to 350°F.

Combine flour, sugar, and salt in a food processor (or bowl and pastry blender) and pulse to blend. Cut butter into chunks and drop one at a time into flour mixture until crumbly. Set aside 1 cup of the flour mixture.

Lightly grease an 11x7 pan. Pour remaining flour mixture into pan and press firmly to cover the bottom. Bake for 20-25 minutes until lightly browned around the edges.

In a medium bowl, combine raspberry jam, cherry preserves, cranberries, cinnamon, spice mix and cloves. Stir to mix well. Pour jam mixture over crust and use a spoon to spread evenly just up to—but not over—the edges.

In a small bowl, mix remaining flour mixture, almonds, and coconut, using your fingers to break up larger pieces if necessary. Sprinkle crumbly mixture over the jam mixture.

Return pan to oven and bake for 35-40 minutes or until lightly browned and bubbly. Let cool for 1 hour. Cut into bars.

When completely cooled, drizzle with melted white chocolate or a light dusting of powdered sugar.

ARE YOU ORIGINALLY FROM IDAHO/BOISE?

I was born in Los Angeles, California, and moved to Hailey, Idaho with my mom and sisters when I was about 10 years old. Before we moved, I remember spending two summers with my cousin at our grandma’s house in Hailey. Looking back, those days were truly the best. We rode our bikes around the neighborhood and into town to buy a Squeeze Pop or Stardust Gum Powder. Nostalgia! They were such simple activities, but ones we couldn’t do back in California where increased crime had become a growing concern. When Grandma pointed out that Idaho would be the perfect place to raise children, Mom followed through on that advice. Later, at 21, I made

the decision to attend Boise State University and I’ve been in Boise ever since.

I haven’t been able to walk through a lot of finished floor plans yet, but I absolutely love The Shearwater, which was our Parade of Homes model. The grand feel you experience when you walk in is incredible, and I love how everyone can gather in separate areas throughout the kitchen or great room while still feeling a sense of togetherness. And the second-floor balcony is a sweet touch.

TELL US ABOUT YOUR FAMILY.

My husband, Juan, and I met in high school and moved to Boise when we attended college here. We’re both in the construction industry—I’m in residential; Juan’s in commercial. Most of our family members still

live in Hailey, and we love visiting them for the holidays. Seven-year-old Jaiden Omari is our sweet Valentine's boy, and we have a fierce 3-year-old daughter named Jordyn Gianna.

WHAT DO YOU LIKE TO DO AS A FAMILY?

We love it all: dinners out, camping, swimming, sitting around the campfire, 4-wheeling, dancing, concerts, family parties, snowshoeing, going to the movies, pumpkin patches, any and all Christmas activities, and just exploring new places.

WHAT’S YOUR FAVORITE DATE NIGHT?

Sometimes we like to plan date nights when one of us doesn’t know where we are going for drinks or dinner—we just know to be ready at

a certain time. Often, the journey takes us to a new place where we might sit at the bar and enjoy talking with each other and those around us. Then, we’re off to our next location for dinner together for the first time at an uncharted destination. The element of surprise makes for a refreshing, fun, and exciting experience.

IDAHO IN WINTER OR SUMMER? WHY?

Summer! Both seasons are wonderful here, but we absolutely love summer, especially since we bought a camper last year. While I loved tent camping, the ability to take a shower and sleep on a comfy bed while still being in nature's beauty is right up my alley. We are a very active family, so being outside in the summer comes naturally for us. A favorite activity is biking on the greenbelt

and rewarding ourselves with a stop at a restaurant, winery, or brewery. The kids especially look forward to seeing what sort of treats they will get along the way. Here in Idaho, a simple hike can lead to a refreshing swim in a gorgeous glacial lake. For us, an ideal summer day includes paddleboarding and/or kayaking with our babies on the lake.

WHAT’S YOUR FAVORITE LOCAL TIP FOR VISITORS TO IDAHO?

Embrace and welcome the hospitality. It might feel weird that random people say hi, wave, or smile regularly, but it’s just the Idaho way. Also, expect to experience all the seasons in one day … seriously.

IDAHO’S BEST KEPT SECRET? BEST PLACE TO HIKE? LOOKING FOR AN INSIDE SCOOP.

Hands down, my favorite place to go to in the summer is Redfish Lake, perhaps because it is the source of so many childhood memories. We’re still making memories today ... biking around the lake, riding to the lodge, and enjoying cocktails while listening to summer concerts. Our kids look forward to eating swirl ice cream cones and clutching their new stuffed animals from the Redfish Lodge Store. And, there’s nothing better than winding down in the evening with s’mores and red wine as we tell stories and gaze at stars by the campfire. The stars at Redfish Lake are remarkable in the boundless night sky, so it’s no surprise that summer reservations fill up fast. Inside scoop: They keep two campsites open on a first-come, first-served basis and that’s how we’ve been able to secure a spot

each year. Every season has its treasures: wildflowers in the spring, refreshing summer swims, the vibrant colors of fall, and striking winter scenes.

ONE WORD TO DESCRIBE SCHELL? WHY?

Generous. For a company to consistently host monthly events and large gatherings— all in the name of embracing culture and creating moments of joy—truly speaks volumes. Every division feels included, welcomed, and celebrated. The effort it takes to coordinate flights, make accommodations, and provide hospitality for multiple coworkers across many locations requires a huge investment of time, money, planning, and care. In addition to this focus on culture, the company’s commitment to family is unique. There is nothing more important than ensuring the care of our

children, and having daycare reimbursement is a rare and valuable benefit.

The connections I’ve built in my short time at Schell Brothers have been truly unforgettable.
