ALMOND RICOTTA BARS

Uses a 12x18 (half sheet) pan*

FOR BARS:

• 2 1/2 cups King Midas flour* • 1 Tbsp baking powder • 1 tsp salt • 2 sticks unsalted butter, softened • 2 cups white sugar • 2 eggs • 2 tsp almond extract* • 1 tsp pure vanilla extract* • 1 (15oz) whole milk ricotta cheese • 1 bag sliced almonds* (for topping)

- Preheat oven to 325 degrees. - Grease bottom & sides of 12x18 pan.* - In medium bowl, sift flour, baking powder, & salt. - In bowl of electric mixer, beat 2 sticks butter & sugar till light & fluffy. - Add eggs & beat thoroughly. - Add almond & vanilla extracts. - Add ricotta cheese till just combined. - Spread batter in prepared pan & bake 35-45 minutes till edges are lightly golden. -Cool completely on wire rack.*

FROSTING:

• 1 stick butter • 4oz cream cheese • 3 cups 10X sugar* • 1 tsp almond extract*

- Place all ingredients in bowl. Using an electric mixer, beat until combined - Spread over cooled bars, cut into squares & top with sliced almonds.

FRUITCAKE BARK This one is for grown-ups only. Or Santa. turning occasionally. - Melt Merckens white chocolate. - Add brandied fruit & nuts, stirring until all coated. - Spread onto wax paper or parchment*. - Add brandy to candied fruit in original Let set. - Break into bite sized pieces. container with lid.
